LUCY'S PASTA
From Dom DeLuise. A simple dish with no meat or tomatoes. The heat from the pasta will cook the eggs.

Steps:
- Brown garlic in olive oil.
- Add onions and gently saute until crunchy and brown.
- When onions are almost done, add parsley and saute until limp.
- Cook pasta in boiling water until al dente.
- While pasta is cooking, beat eggs, cheese, and basil together.
- Drain pasta and place in serving bowl.
- Fold egg mixture into hot pasta.
- Add onion mixture and mix well.
- Sprinkle with pepper and top with additional parsley, basil and Parmesan.

- Heat olive oil in a saucepan over medium heat. Add garlic; cook and stir until fragrant, about 2 minutes.
- Mix water, peanut butter, brown sugar, corn flour, and soy sauce together in a small saucepan until well blended and without any lumps. Bring to a boil; stir until mixture is thick, 6 to 10 minutes. Add the cooked garlic and mix well.

Steps:
- 1. Place all cake ingredients in mixing bowl. Mix on slow speed for 1 minute, then on medium speed for 3 minutes. Pour into a well-greased and floured tube pan (I use a Bundt pan). I've never used baking spray with flour, but I imagine it would work just fine.
- 2. Bake at 325 for 1 hour. I suggest checking for doneness with a toothpick by about 50 minutes. I've discovered that in our high altitude (6400 feet), 50 minutes is just about right.
- 3. Boil dressing ingredients 2 to 3 minutes. Poke holes in cake with a toothpick, and pour hot dressing over hot cake while it's still in the pan. Let cake cool completely in pan.
- 4. This friendship cake is so easy to make . . . very moist. Most friendship cakes call for starter that has to be kept alive, but not this one. I think you'll really enjoy it.
AUNT LUCY'S PASTA

- Healt olive oil in large pan and saute onion and garlic until onion is translucent. While sauting the onion season with salt, pepper, and add red pepper flakes. Add tomatoes to pan and simmer, breaking up tomatoes as they cook. Drain peas and add to pan. Heat through. Add cooked ditalini and stir. Serve with grated cheese and Italian Bread. Quick, easy, and ingrediants are usually always on hand.
FRESH LUMPIA
This is a delightful Filipino favorite. Caramelized onion adds sweetness, and peanuts add crunch to the lumpia filling. Serve with my recipe for fresh lumpia sauce (see Footnote).

- Heat olive oil in a skillet over medium heat. Add onion and garlic; saute until onion is softened and browned, 10 to 15 minutes. Transfer onion and garlic to a plate.
- Cook pork and shrimp in the same skillet until browned, 5 to 7 minutes. Add back the onion and garlic; season with salt and pepper. Add jicama, bean sprouts, chickpeas, green beans, celery, and carrot. Cook and stir until vegetables are tender, about 5 minutes. Place filling mixture in a large bowl. Add peanuts and mix well.
- Place a lettuce leaf on top of a lumpia wrapper. Place 1 tablespoon filling onto the lettuce. Roll up the wrapper, folding 1 end over the filling. Place on a serving platter. Repeat with remaining lettuce, lumpia, and filling.
