LUCY'S PASTA



Lucy's Pasta image

From Dom DeLuise. A simple dish with no meat or tomatoes. The heat from the pasta will cook the eggs.

Number Of Ingredients 13

5 garlic cloves, minced
1/3 cup olive oil
3 onions, sliced into thin crescents
1/2 cup fresh parsley, finely chopped
1 lb spaghetti or 1 lb linguine
water for cooking pasta
3 large eggs
4 tablespoons parmesan cheese, grated
1/2 cup fresh basil, torn into small pieces
fresh ground pepper
parsley
basil
grated parmesan cheese

Steps:

  • Brown garlic in olive oil.
  • Add onions and gently saute until crunchy and brown.
  • When onions are almost done, add parsley and saute until limp.
  • Cook pasta in boiling water until al dente.
  • While pasta is cooking, beat eggs, cheese, and basil together.
  • Drain pasta and place in serving bowl.
  • Fold egg mixture into hot pasta.
  • Add onion mixture and mix well.
  • Sprinkle with pepper and top with additional parsley, basil and Parmesan.

1 ½ tablespoons cornstarch
2 tablespoons minced garlic, or to taste
¼ teaspoon red pepper flakes

Steps:

  • Stir together the water, brown sugar, and cornstarch in a small saucepan. Bring to a simmer over medium-high heat, and stir until the sugar has dissolved and the sauce has thickened. Remove from the heat, and stir in the garlic and red pepper flakes.

1 tablespoon olive oil
3 cloves garlic, crushed
2 cups water
2 tablespoons peanut butter
2 tablespoons brown sugar
2 tablespoons corn flour
1 tablespoon soy sauce

Steps:

  • Heat olive oil in a saucepan over medium heat. Add garlic; cook and stir until fragrant, about 2 minutes.
  • Mix water, peanut butter, brown sugar, corn flour, and soy sauce together in a small saucepan until well blended and without any lumps. Bring to a boil; stir until mixture is thick, 6 to 10 minutes. Add the cooked garlic and mix well.

LUCY'S FRIENDSHIP CAKE

This recipe is from the book Friendship Cake by Lynne Hinton, a writer friend of mine. I highly recommend this story about four friends in a Southern town. Beautiful story! You'll love this cake! Just one more thing . . . in order to be really honest, I wrote to Lynne, asking permission to use her recipe. This is what she wrote...

1 box duncan hines or betty crocker butter cake mix
1 small package instant vanilla pudding (4 oz.)
1/2 c vegetable oil
1/2 c water
1/2 c creme sherry
1 c pecans, finely chopped
4 eggs
BOILED DRESSING
3/4 c granulated sugar
3/4 stick butter
3 Tbsp creme sherry
3 Tbsp water

Steps:

  • 1. Place all cake ingredients in mixing bowl. Mix on slow speed for 1 minute, then on medium speed for 3 minutes. Pour into a well-greased and floured tube pan (I use a Bundt pan). I've never used baking spray with flour, but I imagine it would work just fine.
  • 2. Bake at 325 for 1 hour. I suggest checking for doneness with a toothpick by about 50 minutes. I've discovered that in our high altitude (6400 feet), 50 minutes is just about right.
  • 3. Boil dressing ingredients 2 to 3 minutes. Poke holes in cake with a toothpick, and pour hot dressing over hot cake while it's still in the pan. Let cake cool completely in pan.
  • 4. This friendship cake is so easy to make . . . very moist. Most friendship cakes call for starter that has to be kept alive, but not this one. I think you'll really enjoy it.

AUNT LUCY'S PASTA

Half box ditalini, cooked
1 large can peas
1 large can whole tomatoes
l large onion, chopped
3 cloves garlic, chopped
2 tablspoons olive oil
Half teaspoon red pepper flakes
Salt and pepper to taste
Grated parmesan cheese

Steps:

  • Healt olive oil in large pan and saute onion and garlic until onion is translucent. While sauting the onion season with salt, pepper, and add red pepper flakes. Add tomatoes to pan and simmer, breaking up tomatoes as they cook. Drain peas and add to pan. Heat through. Add cooked ditalini and stir. Serve with grated cheese and Italian Bread. Quick, easy, and ingrediants are usually always on hand.

This is a delightful Filipino favorite. Caramelized onion adds sweetness, and peanuts add crunch to the lumpia filling. Serve with my recipe for fresh lumpia sauce (see Footnote).

2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, crushed
3 (6 ounce) lean pork tenderloins, sliced into small pieces
4 cups uncooked medium shrimp, peeled and deveined
½ small jicama (singkamas or yambean), peeled and cut into matchsticks
1 ½ cups bean sprouts
⅔ cup chickpeas, drained
1 cup fresh green beans, trimmed
2 stalks celery, diced
1 large carrot, minced
1 cup crushed salted peanuts
1 cup crushed salted peanuts, or to taste
1 head green leafy lettuce, or to taste
1 (16 ounce) package lumpia wrappers

Steps:

  • Heat olive oil in a skillet over medium heat. Add onion and garlic; saute until onion is softened and browned, 10 to 15 minutes. Transfer onion and garlic to a plate.
  • Cook pork and shrimp in the same skillet until browned, 5 to 7 minutes. Add back the onion and garlic; season with salt and pepper. Add jicama, bean sprouts, chickpeas, green beans, celery, and carrot. Cook and stir until vegetables are tender, about 5 minutes. Place filling mixture in a large bowl. Add peanuts and mix well.
  • Place a lettuce leaf on top of a lumpia wrapper. Place 1 tablespoon filling onto the lettuce. Roll up the wrapper, folding 1 end over the filling. Place on a serving platter. Repeat with remaining lettuce, lumpia, and filling.
