ITALIAN MEATLOAF

Number Of Ingredients 15

1/4 cup plus 2 tablespoons extra-virgin olive oil
4 teaspoons (about 6 cloves) chopped garlic
2 medium onions, diced
2 red peppers, seeded, small diced
1/2 cup chopped basil leaves
2 tablespoons chopped parsley leaves
4 eggs
1 teaspoon salt
1/2 teaspoon black pepper
2 cups grated Parmesan
1 1/2 cups breadcrumbs
3 pounds ground beef
2 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
1 cup marinara sauce

Steps:

  • Preheat oven to 350 degrees F.
  • Heat 1/4 cup of the olive oil in a medium saute pan over medium heat and add the garlic. Saute 1 minute and then add the peppers and onions and saute until just soft. Let cool.
  • Whisk together the basil, parsley and eggs in a small bowl, and then add the salt and black pepper. Combine the Parmesan and breadcrumbs in another small bowl. Thoroughly combine the meat, herbs and eggs, Parmesan and breadcrumbs, the Worcestershire, vinegar and remaining 2 tablespoons olive oil together in a large bowl using your hands, making sure not to overmix.
  • Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
  • Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

1 lb extra lean ground beef
1 medium carrot, shredded
1/2 onion, finely chopped
1/2 green pepper, finely chopped
1 tablespoon chili powder
2 tablespoons Worcestershire sauce
1 slice whole wheat bread (to use as breadcrumbs)
2 egg whites
1/3 cup tomato ketchup

Steps:

  • Preheat oven to 400 degrees.
  • Lightly spray a nonstick or silicone muffin pan with nonstick cooking spray.
  • Crumble ground beef into a large bowl.
  • Add shredded carrots, chopped onion, and green pepper.
  • Add chili powder, Worcestershire sauce and the breadcrumbs. Stir with a fork. Add egg whites and stir again with a fork until well blended. You can knead the mixture with your hands but sometimes this makes the meat overly tough.
  • Spoon mixture into prepared muffin pan, and top each cup with ketchup. Bake for 25 minutes, making sure that the internal temperature reaches 165 degrees.
  • Serves 6.

I have made this meatloaf for years, and my family and friends just love. One day while thumbing through my cookbooks I discovered a recipe with this delicious topping. Have made it like this ever since. Recently made with the addition on 1/2 large onion (or 1 medium) chopped.

2 lbs beef (or beef and pork combination)
6 slices bread, processed fine (I use Italian Style bread crumbs)
2 eggs
3 tablespoons parmesan cheese
1 tablespoon parsley
1 teaspoon oregano
1 teaspoon salt
1 garlic clove (minced)
1/4 cup brown sugar
1 tablespoon mustard
1/4 cup catsup

Steps:

  • Mix all ingredients together as listed.
  • Put into glass Pyrex casserole dish.
  • Mix topping ingredients together and spread over top of meat, covering completely.
  • Bake@ 350 degrees for 1 hour.

My family loves this Italian version of a meat loaf that I make with ground turkey. Calories, fat and cholesterol wre reduced by: Using egg whites instead of a whole egg Replacing ground beef with ground turkey breast Using shredded apples to add moisture that is lost by eliminating the beef fat Using a reduced-fat spaghetti sauce. 445 calories per serving before, 227 after.

2 egg whites, lightly beaten
2 garlic cloves, minced
3/4 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon dried rosemary
1/4 teaspoon crushed red pepper flakes
1 medium apple, peeled, cored and finely shredded
1/2 cup chopped onion
1/2 cup fine seasoned dry bread crumb
1 lb ground turkey
2/3 cup reduced-fat spaghetti sauce
2 tablespoons grated parmesan cheese

Steps:

  • Preheat the oven to 350 degrees.
  • In a large bowl, stir together the egg whites, garlic, basil, salt, rosemary and red pepper.
  • Then stir in the apples, onions and bread crumbs.
  • Add the turkey and mix until well combined.
  • Spray a 8x4x2" loaf pan with non-stick spray.
  • Pat the turkey mixture into the pan.
  • Bake for 15 minutes.
  • Spread the spaghetti sauce over the top of the turkey.
  • Bake about 25 minutes more, or until the turkey is no longer pink.
  • Let stand for 5 minutes.
  • Transfer the loaf to a serving plate.
  • Sprinkle the parmean cheese over the top.
  • Slice and serve.
