LOW-FAT HOMEMADE BISCUITS
Biscuits are one of those items that go with an array of dishes. I've recreated this recipe to be lowfat and sugar free, so you REALLY can't go wrong with these! They brown nice and light on the outside, yet stay really moist and soft on the inside. Recently, I just made this recipe, sliced the biscuits in half, and stuffed them with a scrambled egg dish and cheese. Really tasty! Of course, they also pair nicely with a good stew, too! Or just eat them by themselves! :0) Enjoy!!

Steps:
- Preheat oven to 425 degrees.
- In a bowl, combine flour, baking powder, and salt.
- Add yogurt and honey. With a fork, "cut in" the yogurt and honey to the dry ingredients (like you would with buttter), and combine until crumbly.
- Add milk and stir until the dough forms a ball.
- Pat or roll the dough out to 1/2-1 inch thick (depending on how big you want your biscuits).
- With a floured glass or circular cutter, cut dough into circles.
- Place biscuits on a greased cookie sheet.
- Bake for 10-12 minutes, or until lightly browned on top.
- Enjoy with honey, butter, gravy, cheese or plain!
- *** Another version of this biscuit (we call it "The Breakfast Version")***.
- Add 1/2-3/4 cup of raisins
- 1 tablespoon cinnamon.
- Serve with applesauce.

LIGHTER BUTTERMILK BISCUITS
Here it is - the perfect lower-fat biscuit recipe. I was pleasantly surprised when I first tried this recipe and found it to be light and flakey like the more deadly ones.

Steps:
- Preheat oven to 425.
- Coat a baking sheet with nonstick cooking spray.
- Put the flour, baking powder, baking soda, salt and sugar into the bowl of a food processor fitted with a metal blade.
- Process for about 2 seconds.
- Drop the margarine pieces on top of the flour and process for about 8 seconds.
- The mixture will be the consistency of coarse crumbs.
- Do not overprocess.
- Transfer the mixture to a mixing bowl.
- Alternatively, cut the margarine into the flour using a pastry blade, 2 forks, or your fingertips.
- Stir the buttermilk into the dry ingredients with a fork just until combined.
- When the biscuit dough holds together, drop it by large spoonfuls onto the baking sheet.
- Bake for 10-12 minutes or until the biscuits are puffy and lightly browned.
- Serve them immediately.
FAST & EASY LOW FAT DROP BISCUITS
These are easy and fast to make in your food processor (though you could do it by hand). They are slightly non-traditional biscuits in that they don't use shortening, but they are very tasty and work great when dunked into soup.

Steps:
- Preheat your oven to 400 degrees.
- Put the flour, baking powder& baking soda, and salt into your food processor.
- (Or you can do it by hand. The food processor is much easier, though.) Pulse once or twice to mix.
- Then add the oil and pulse a few times until it appears mixed.
- Add the sour cream and pulse until the dough comes together (sort of into a ball but not really).
- Drop by spoonfuls onto a cookie sheet you have sprayed with non-stick spray.
- Bake for 15 minutes or until lightly browned.
