FARMERS' COUNTRY BREAKFAST CASSEROLE

Mmmmm....hash browns, ham and eggs; just like down on the farm, but you only need one pan! This needs to chill overnight, so plan ahead. Prep. time does not reflect refrigeration time.

24 ounces frozen hash brown potatoes
8 eggs, beaten
1 cup milk
1 1/2 cups ham, cut up into 1 inch pieces
8 ounces shredded cheddar cheese
1/2 cup onion, chopped
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a 9 x 13 greased baking pan, layer potatoes, ham, onion and cheese.
  • In a medium bowl, beat eggs; add milk, salt and pepper to eggs; beat well until thoroughly incorporated.
  • Pour over potato/ham layers.
  • Cover and refrigerate overnight.
  • To prepare: Preheat oven to 350 degrees; remove cover and bake for approximately 60 minutes.

16 slices firm white bread
2 1/2 cups cubed cooked ham (I use a ham steak)
16 ounces cheddar cheese, shredded
16 ounces mozzarella cheese, shredded
6 eggs
3 cups whole milk
1/2 teaspoon dry mustard
1/4 teaspoon onion powder
3 cups uncrushed corn flakes
1/2 cup butter, melted

Steps:

  • Trim crusts from bread; cut slices in half.
  • Grease a 13 x 9 x 2 inches baking pan (or slightly larger) and layer as follows: Cover bottom of pan with one-half of bread, one-half of ham and one-half of each of the cheeses.
  • Repeat layers.
  • Combine eggs, milk, and seasonings.
  • Pour over layers; refrigerate overnight.
  • Remove from refrigerator 30 minutes before baking.
  • Combine topping ingredients; sprinkle over casserole.
  • Bake 375 for 45-55 minutes (cover loosely with foil to prevent top from over browning).
  • Let stand 10-15 minutes before cutting into squares.

This dish makes a very hearty breakfast, and easily feeds a large family or group. Fortunately, it is also easy to halve this recipe. I usually serve this with a fruit salad or compote.

2 cups frozen hash browns
2 lbs cooked and drained sausage (I sometimes use a bit of both.) or 2 lbs bacon (I sometimes use a bit of both.)
1/2 cup chopped onion
1/2 cup chopped green bell pepper
12 eggs
2 cups milk
2 teaspoons salt
1 teaspoon fresh ground pepper
1 teaspoon dry mustard
12 ounces grated cheddar cheese

Steps:

  • Line a prepared 9 x 13 baking dish with frozen hash browns. Top evenly with cooked sausage (or bacon), onion, and green bell pepper.
  • In a separate dish, mix together eggs, milk, salt, pepper, and dry mustard. Pour this over meat and hash browns.
  • Top everything evenly with the grated cheddar cheese.
  • Refrigerate overnight.
  • Bake in a preheated 350 degree F oven for about 45 to 60 minutes (or until done and slightly brown).

1 teaspoon oil
1 large onion, diced
1 large green pepper, diced
4 ounces ham, diced
8 ounces lean turkey sausage
1 cup low-fat baking mix
2 cups fat free egg substitute
1 cup part-skim mozzarella cheese
1 cup skim milk
1 teaspoon dry mustard
2 teaspoons ground pepper
2 teaspoons salt

Steps:

  • Sute onion and pepper in oil until beginning to soften. Add sausage, and, when the sausage is beginning to brown, add the ham. Saute for several minutes more.
  • Spray a casserole with non-stick spray, and layer 1/2 of the pepper/onion/meat mix in the bottom of the casserole. Top with 1/2 cup of the baking mix (low-fat bisquik) and 1/2 cup of cheese.
  • Cover the cheese layer with the remaining pepper/onion/meat mix, and top with the remaining baking mix and cheese.
  • In a large bowl, mix the egg substitute, milk, and spices. Pour the egg mixture over the layers in the casserole, and, with a knife, mix the casserole layers slightly to let the egg mixture penetrate all. At this point, the casserole can be covered to sit in the fridge overnight, or it can be baked immediately. (I prefer to let it sit; the flavors meld and improve).
  • To bake: Preheat oven to 350 F and bake for 30-45 minutes, until set in the middle. Let cool before serving.

A package of country gravy mix makes this casserole different. You can make it the classic way, or healthier by subtituting low fat sausage, egg substitute and less cheese. Whichever you choose, enjoy!

12 ounces reduced-fat sausage (1 roll)
6 slices whole wheat bread, crust removed
12 large eggs
1 1/2 cups milk
1 (2 2/3 ounce) package country gravy mix (McCormick Brand)
2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 325°F.
  • In a skillet, cook crumbled sausage in large skillet over medium heat until brown, stirring occasionally. Remove sausage and drain on paper towel.
  • Cut bread into 1-inch cubes. Place in 9 x 13 casserole dish. Sprinkle cheese and then sausage evenly on top.
  • In a blender, mix eggs, milk and Gravy Mix. (You could also use the Sausage Country Gravy mix instead) Pour mixture over bread, cheese and sausage.
  • Bake covered lightly with foil for 40 minutes. Remove foil and bake another 5 or 10 minutes or until knife inserted in the center comes out clean.
  • To make the night befoe: You can cover the dish and refrigerate overnight. In the morning, bake 50 minutes then 10.
  • Remove from oven and let stand 10 minutes before serving.
