LOWER FAT OATMEAL MOLASSES COOKIES
These are really good low-fat cookies. They have a good consistency and flavor. I have made them so many times and my family loves them.

Steps:
- Cream margarine; gradually add sugar, beating at medium speed of an electric mixer until well blended.
- Add molasses, egg and vanilla; beat well.
- Combine flour and next 5 ingredients in a medium bowl, stirring mixture well.
- Gradually add flour mixture to creamed mixture, mixing well to combine.
- Drop dough by level tablespoonfuls, 2 inches apart, onto cookie sheets coated with cooking spray.
- Bake at 350 for 12-13 minutes or until very lightly browned.
- Cool slightly on cookie sheets.
- Remove from cookie sheets and cool completely on wire racks.

HEALTHY MOLASSES COOKIES (NO SUGAR NO WHITE FLOUR)
Molasses cookies are such a classic to make in the winter. Filled with warming and healing spices, these are perfect to make when the weather outside is frightful!

Steps:
- Preheat your oven to 350 degrees. Line a baking tray with parchment paper or a baking mat.
- In a medium sized bowl add the flour, baking soda, ginger, cinnamon, cloves, nutmeg, and sea salt. Sift together to combine.
- In a separate bowl add the vegan butter, honey, molasses, egg, and vanilla. Using a handheld mixer, beat until smooth and fluffy.
- Fold your dry ingredients into your wet ingredients.
- Place in the fridge for at least an hour.
- Remove the chilled dough from the fridge. Roll into 2 tablespoon sized balls. Dip them in sugar.
- Place on a baking mat and bake 8-10 minutes. Bake only until the tops crack!
- Enjoy warm!

WWII OATMEAL MOLASSES COOKIES
This was my Grandmother's recipe from the 1940's. These cookies use molasses in place of brown sugar, which was one of the items rationed during the war (and harder to get than white sugar, they tell me). To me they're better than regular oatmeal cookies!

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, stir together the flour, oatmeal, baking soda, baking powder, and salt.
- In another large bowl, beat the sugar with the shortening until smooth and creamy; mix in beaten eggs, molasses, and vanilla. Gradually mix in the dry ingredients. Stir in walnuts and raisins. Drop by teaspoonfuls onto ungreased baking sheets.
- Bake for 10 to 12 minutes, or until slightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
