A chocolate cookie studded with chocolate chips? Yes, please! If you are a fan of softer cake-like chocolate cookies, this recipe is for you. Adding mashed bananas doesn't just add flavor but also adds sweetness and moisture to these soft cake-like cookies, allowing for the reduction of sugar and fat in the recipe. There are mini chocolate chips as well as cocoa powder in these cookies for a double hit of chocolate. The cocoa powder makes the dough deeply chocolatey and the chips add little bits of melty sweet chocolate with every bite..

4 Tbsp Unsweetened cocoa powder
0.5 tsp Baking soda
6 Tbsp Light butter melted, cooled
0.25 cup(s) Packed brown sugar dark variety
2 medium Banana(s) ripe, mashed
1 large egg(s) Egg(s)
1 large Uncooked egg yolk(s)
2 tsp Vanilla extract
0.5 tsp Table salt
0.5 cup(s) Mini semisweet chocolate chips

Steps:

  • Arrange oven racks in top and bottom thirds of oven and preheat to 375°F. Line 2 baking sheets with parchment paper. In medium bowl, whisk flour, cocoa powder, and baking soda. In large bowl, whisk butter and sugar. Add bananas, egg, egg yolk, vanilla, and salt and whisk until blended. Add dry ingredients to wet ingredients and, using rubber spatula, mix until ingredients are fully blended and dough forms. Fold in chocolate chips.
  • Scoop out dough by 2 tablespoonfuls and place on prepared baking sheets, arranging dough evenly apart. Bake, rotating and reversing pans from top and bottom racks halfway through baking, until cookies are puffy and soft in middle but firm around edges, 5 to 6 minutes. Let cool on wire racks.
  • Serving size: 1 cookie

I'm always looking for ways to make recipes a little more diet friendly. As a lover of chocolate chip cookies, I'm pretty picky about the texture and flavor of lower fat versions. After about 5 years of tweaking, here's a version that is healthier and delicious!

1/2 cup light land o lakes butter (or equivalent)
1/4 cup salted butter
1/4 cup applesauce
1/2 cup white sugar
1/4 cup Splenda granular
3/4 cup brown sugar
2 eggs
2 teaspoons vanilla
1 1/2 cups white flour
1/2 cup whole wheat flour
2/3 cup cocoa
1 (3 1/2 ounce) package chocolate pudding
3/4 teaspoon baking soda
1/4 teaspoon salt
2 cups miniature chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Cream together softened butter, light butter, applesauce brown sugar, white sugar, & Splenda. After creamed together, add 2 room temperature eggs (I put my eggs in a cup of hot water for a couple of minutes to speed things up.) and mix. Add in vanilla.
  • In a separate bowl combine flour, cocoa, baking soda, pudding, & salt and combine these ingredients.
  • Then take the dry ingredients and add to the wet ingredients a little at a time. When incorporated, you can add the mini morsels.
  • Spoon onto a greased cookie sheet and bake for appx. 10 minutes. Pull them from the oven BEFORE they look done. As they cool they will firm up and you will have a very chewy and chocolaty lower fat cookie!

These were advertised as the best tasting low fat chocolate chip cookies ever. Certainly caught my eye. While these are not really lowfat for me, the are certainly lower than your usually cookie.

16 tablespoons light butter, such as Smart Balance or Land O'Lakes Light
1 egg
2 egg whites
1 1/4 teaspoons vanilla extract
1/3 cup sugar
1/2 cup brown sugar, packed
1 1/2 cups unbleached flour
1/2 cup ground oatmeal (measure after grounding the oats to a coarse flour consistency)
1 teaspoon baking soda
10 ounces semi-sweet chocolate chips, good quality (I plan to chop up dark Dove bars)
1/4 cup chopped walnuts (optional)
1/4 teaspoon salt, to bring out a bit more flavor

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Cream the butter and both sugars in a large bowl. Beat with electric mixer until smooth. Add the egg, egg whites, salt and the vanilla. Beat well.
  • In a smaller bowl, combine the dry ingredients (flour, ground oatmeal and baking soda). Slowly add the dry items into the larger bowl and beat with electric mixer until batter is smooth and creamy. Fold in entire bag of chocolate chips, and if you like add the walnuts.
  • Drop dough by large teaspoons (or scant Tablespoons) onto cookie sheet and bake for 11 minutes (the time REALLY depends on your oven so watch that first batch!).

1/2 teaspoon vanilla
1 egg white
1 cup all-purpose flour

1/2 cup chocolate chips

Steps:

  • Heat oven to 375°.
  • In large bowl, combine brown sugar and margarine until light and fluffy.
  • Add vanilla and egg white; blend well.
  • Add dry ingredients; mix well.
  • Mix in chips.
  • Drop by teaspoonfuls 2-inches apart onto ungreased cookie sheets.
  • Bake for 8-9 minutes. Cool 1 minute before removing from cookie sheet.

This is an adaptation of a Hershey's recipe I developed for the 2006 'Zaar cookie swap. These are small cookies but they have a wonderful soft cakey texture and a rich chocolate flavor. I made them with a 1 tablespoon cookie scoop and got 26 cookies. Stick with measuring out a teaspoon or so of dough and you should get the full three dozn. They do get dry after a few days, much more so than a typical cake cookie. My advice, share them and enjoy.

6 tablespoons butter, softened
2 tablespoons light butter, softened
1/4 cup Splenda brown sugar blend (equal to 1/2 cup brown sugar)
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
2 -3 tablespoons cocoa (I like Droste)
1/2 teaspoon baking soda
1/8 teaspoon salt
2 tablespoons skim milk
1/2 cup sugar-free chocolate chips (If yo can't find the chips, a bar chopped into bits works too)

Steps:

  • Preheat oven to 375°.
  • In medium bowl, beat butters and brown sugar together until well blended. Add egg and vanilla continuing to beat well.
  • Stir together flour, cocoa, baking soda and salt. Add dry ingredients alternately with milk to butter mixture.
  • Stir in small chocolate chips (or chopped chocolate).
  • Drop by teaspoonfuls onto ungreased cookie sheet. Flatten tops of cookies using the bottom of a glass or the palm of your hand. (Note these cookies do not spread.) Bake 7 to 9 minutes or just until set.
  • Remove from cookie sheet to wire rack. Cool completely.
