LIGHT CARAMEL SAUCE



Light Caramel Sauce image

This is based on Ree Drummond's excellent recipe, with lighter ingredients in place of the heavier ones in the original recipe.

Number Of Ingredients 5

1 cup brown sugar, packed
1/2 cup fat-free half-and-half
4 tablespoons light butter
1 pinch salt
1 tablespoon vanilla extract

Steps:

  • Mix the brown sugar, half-and-half, butter and salt in a saucepan over medium-low heat. Cook while whisking gently for 5 to 7 minutes, until it gets thicker. Add the vanilla and cook another minute to thicken further. Since the half-and-half and butter are lower in fat, it might take a few more minutes to thicken than it would with regular ingredients.
  • Turn off the heat, cool slightly and pour the sauce into a jar. Refrigerate until cold.

  • In a small saucepan (I used a 2-quart saucepan), add the maple syrup, water, sucanat, and erythritol. Add a candy thermometer to the pot and place over medium-high heat. Do not stir, let it come to a boil.
  • At 250 degrees Fahrenheit, remove the pot from the heat and whisk in the coconut milk/oil mixture. Stop whisking once it's all added. Return to medium-high heat.
  • At 220 degrees Fahrenheit, reduce the heat to medium-low and cook for 5 minutes. It should look like a dark caramel syrup. Whisk in the vanilla. Pour the mixture into a heat-proof container (I used a 4-cup measuring glass) and let it come to room temperature. Cover and refrigerate overnight. Keeps for ~2 weeks. Whisk before serving.
