Love bearnaise sauce but are watching the calories? Even if you aren't a health nut, cutting back on saturated fats and extra calories is a good idea for most. This recipe takes the classic taste of bearnaise and makes it lower in fat and calories. The taste is familiar and velvety smooth, but better on your waistline! How can you go wrong there?

Number Of Ingredients 7

1/2 cup shallot, thinly sliced
3 tablespoons dry white wine
2 tablespoons white wine vinegar
1 teaspoon dried tarragon
salt, to taste
pepper, to taste
2/3 cup light sour cream (fat free can be used, but low fat gives a smoother texture)

Steps:

  • Combine the first 6 ingredients in a small, heavy saucepan; bring to a boil and cook 1 minute.
  • Strain mixture, reserving liquid; discard solids.
  • Return liquid to saucepan; stir in sour cream.
  • Place over low heat, and cook 1 minute or until warm, stirring frequently.
  • ***note*** if you want more intense flavour you may reserve the solids, puree them, and then return them to the sauce along w/ sour cream.

This deliciously creamy herb sauce is so simple to make using a microwave, but if you do not have one, place your bowl over a pan of simmering water to heat it gently. Excellent German recipe for Bernaise sauce. Great on steaks, chicken, vegetables and fish.

¼ cup butter
1 teaspoon minced onion
1 tablespoon white wine vinegar
2 egg yolks, beaten
2 tablespoons heavy cream
1 ½ teaspoons lemon juice
1 teaspoon dried tarragon
1 teaspoon chopped fresh parsley
¼ teaspoon salt
1 pinch dry mustard
1 pinch cayenne pepper

Steps:

  • Place butter in a medium glass bowl, and melt in the microwave, about 30 seconds on High. Whisk in the onion, white wine vinegar, egg yolks, heavy cream and lemon juice. Season with tarragon, parsley, salt, mustard powder and cayenne pepper; mix well.
  • Return to the microwave, and cook for 1 1/2 minutes, or until thickened, stirring until smooth every 20 to 30 seconds.

1 tablespoon lemon juice
1 tablespoon onion, minced
1/2 teaspoon dried tarragon
1/2 cup mayonnaise
1/2 cup milk
1 teaspoon prepared mustard
1/4 teaspoon salt
1 pinch pepper

Steps:

  • In small saucepan over medium-low heat combine lemon juice with onion and tarragon.
  • Simmer 2 minutes.
  • Reduce heat to low and add mayonnaise, milk, mustard, salt and pepper.
  • Whisk until smooth.
  • Cook, stirring occasionally, 3 minutes or just until hot. Do not boil.

2 egg yolks
½ teaspoon freshly ground black pepper, or to taste
2 teaspoons tarragon Dijon mustard
1 teaspoon tarragon vinegar
1 teaspoon water
1 pinch salt

Steps:

  • Whisk egg yolks, black pepper, tarragon Dijon mustard, tarragon vinegar, water, and salt in a metal mixing bowl or small saucepan. Place over low heat and whisk until mixture foams, small wisps of steam appear from the sauce, and sauce is hot and thick, 1 to 2 minutes. Raise and lower the pan over the heat to increase or reduce heat.
  • Remove from heat and whisk a few more seconds to make sauce slightly fluffy. Serve immediately.
