With a cinnamon-spiced batter and crunchy topping, these Apple Streusel Muffins are full of cozy fall flavors. Great for a grab-and-go breakfast or dessert!

2 ¼ cups (292 g) all-purpose flour
½ cup (100 g) granulated sugar
¼ cup (50 g) brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon salt
3/4 cup (180 ml) buttermilk, at room temperature
½ cup (113 g) unsalted butter, melted and cooled
2 large eggs, at room temperature
1 teaspoon vanilla extract
1 cup (130 g) diced apple, any variety
2/3 cup (86 g) all-purpose flour
1/3 cup (70 g) light brown sugar, packed
½ teaspoon ground cinnamon
1/4 cup (56 g) unsalted butter, melted
1 ½ cups (180 g) confectioners' sugar
2-3 tablespoons apple cider, or apple juice

Steps:

  • Position the oven rack to the middle position and preheat to 400°F. Line a standard 12-cup muffin tin with paper liners; set aside.
  • In a large bowl, whisk the flour, both sugars, baking powder, baking soda, cinnamon, and salt, cinnamon until well combined. Make a "well" in the center of the dry ingredients.
  • In a liquid measuring cup, beat the buttermilk, butter, egg, and vanilla together until combined. Pour into the center of the dry ingredients and stir just until a few streaks of flour remain. Gently stir in the apple.
  • Divide evenly among the muffin tin cups, filling the cups only 2/3 full.
  • In a small bowl, whisk the flour, brown sugar, and cinnamon. Use a fork to stir in the butter until the mixture is coarse and crumbly. Sprinkle streusel over each muffin, gently pressing into the batter.
  • Bake 12-15 minutes, until golden brown and a toothpick inserted in the center comes out clean.
  • Cool the muffins for 5 minutes in the pan then transfer to a wire rack to cool completely.
  • Top with glaze and serve immediately. Muffins are best the day they are made but they can be stored for later use, see make-ahead tips in the notes below.
  • Whisk the confectioners' sugar and apple cider together until smooth. Use only enough cider to make the glaze pourable.

1 cup (125 g) chopped apples
1 cup (117 g) sliced walnuts
1/4 cup (35 g) all-purpose flour
1 tsp (7 g) ground cinnamon
3 tbsp (42 g) unsalted butter (melted)
2 tbsp (28 g) unsalted butter (soft)
2 tbsp (24 g) brown sugar
2 tbsp (16 g) all-purpose flour
2 cups (250 g) all-purpose flour
1 tsp (5 g) baking powder
1 tsp (5 g) baking soda
1/2 cup (114 g) softened butter
1/2 cup (100 g) granulated sugar
3 large (99 g) eggs
1/2 tsp (2 g) 1/2vanilla extract
1/3 cup (80 g) apple juice

Steps:

  • Preheat oven to 350F/170C. Grease or place muffin papers inside 12 muffin tin.
  • To prepare streusel, in a medium bowl, combine brown sugar, apples, walnuts, flour and cinnamon. Stir in melted butter and set aside.
  • For the crumble; in a small bowl, add all the ingredients: butter, flour and sugar. And with your fingertips work the butter into the flour and sugar to form coarse crumbles. Set aside.
  • For the muffins, in a medium bowl, combine flour, baking powder and baking soda. Mix well. In a large bowl of standing mixer, set on medium speed and beat butter and sugar until light and fluffy (about 10 minutes).
  • Add eggs, one at a time, beat well after each addition. Add vanilla. Set mixer to low, alternately beat flour mixture and apple juice into egg mixture.
  • Spoon the batter into the 12 muffin tin and spoon on each muffin batter the streusel mixture, we prepared earlier. Bake for 15 minutes.
  • Remove the muffin tin from the oven, sprinkle the top with the crumble and bake for another 15 minutes. Transfer to wire rack and let cool completely before enjoying them.

1 1/2 cups whole wheat flour (or spelt flour)

4 egg whites, beaten to soft peaks
apple, wedges to garnish (with or without peel)

Steps:

  • Soak the oats, apple juice, sugar and vanilla for 30 minutes.
  • Mix in the flour, baking powder, grated apple and cinnamon.

1 cup apples- peeled, cored, and finely diced
⅓ cup packed brown sugar
⅓ cup rolled oats
⅓ cup chopped pecans
¼ cup all-purpose flour
3 tablespoons butter, melted

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease the bottoms of 12 muffin cups or line with paper liners.
  • Combine flour, white sugar, baking powder, cinnamon, nutmeg, and salt in a medium bowl; mix well.
  • Combine apple cider, vegetable oil, and egg in another bowl; blend well. Add flour mixture all at once and stir just until moistened; batter will be lumpy. Stir in apples.
