APPLE STREUSEL MUFFINS
With a cinnamon-spiced batter and crunchy topping, these Apple Streusel Muffins are full of cozy fall flavors. Great for a grab-and-go breakfast or dessert!

- Position the oven rack to the middle position and preheat to 400°F. Line a standard 12-cup muffin tin with paper liners; set aside.
- In a large bowl, whisk the flour, both sugars, baking powder, baking soda, cinnamon, and salt, cinnamon until well combined. Make a "well" in the center of the dry ingredients.
- In a liquid measuring cup, beat the buttermilk, butter, egg, and vanilla together until combined. Pour into the center of the dry ingredients and stir just until a few streaks of flour remain. Gently stir in the apple.
- Divide evenly among the muffin tin cups, filling the cups only 2/3 full.
- In a small bowl, whisk the flour, brown sugar, and cinnamon. Use a fork to stir in the butter until the mixture is coarse and crumbly. Sprinkle streusel over each muffin, gently pressing into the batter.
- Bake 12-15 minutes, until golden brown and a toothpick inserted in the center comes out clean.
- Cool the muffins for 5 minutes in the pan then transfer to a wire rack to cool completely.
- Top with glaze and serve immediately. Muffins are best the day they are made but they can be stored for later use, see make-ahead tips in the notes below.
- Whisk the confectioners' sugar and apple cider together until smooth. Use only enough cider to make the glaze pourable.

- Preheat oven to 350F/170C. Grease or place muffin papers inside 12 muffin tin.
- To prepare streusel, in a medium bowl, combine brown sugar, apples, walnuts, flour and cinnamon. Stir in melted butter and set aside.
- For the crumble; in a small bowl, add all the ingredients: butter, flour and sugar. And with your fingertips work the butter into the flour and sugar to form coarse crumbles. Set aside.
- For the muffins, in a medium bowl, combine flour, baking powder and baking soda. Mix well. In a large bowl of standing mixer, set on medium speed and beat butter and sugar until light and fluffy (about 10 minutes).
- Add eggs, one at a time, beat well after each addition. Add vanilla. Set mixer to low, alternately beat flour mixture and apple juice into egg mixture.
- Spoon the batter into the 12 muffin tin and spoon on each muffin batter the streusel mixture, we prepared earlier. Bake for 15 minutes.
- Remove the muffin tin from the oven, sprinkle the top with the crumble and bake for another 15 minutes. Transfer to wire rack and let cool completely before enjoying them.

- Preheat oven to 375 degrees F.
- Butter muffin cups or line with muffin liners.
- Put streusel topping ingredients into a medium-size bowl.
- Mix with a fork, then crumble with fingers until mixture looks like chopped walnuts.
- For muffins: thoroughly mix flour, sugar, baking powder, cinnamon, allspice, baking soda, and salt in a large bowl.
- Break eggs into another bowl.
- Add yoghurt and melted butter, and whisk until well blended.
- Stir in diced apple.
- Pour egg mixture over flour mixture and fold in just until dry ingredients are moistened.
- Scoop batter into muffin cups.
- Top each muffin with about 2 teaspoons of the streusel topping.
- Bake for 25 minutes, or until done.

- Preheat the oven to 400 degrees F (200 degrees C). Grease the bottoms of 12 muffin cups or line with paper liners.
