LOW CALORIE TATA CAKE
I'm always looking for low calorie recipes duet to my ballet, and my parents are very supportive. My mom just remembered a recipe that my grandma (I call her 'tata', hence the name I gave it...) used to make, and I altered it to make it even more low calorie. It's baking in the oven right now, and it looks good! I'll let you know how it turned out! I also added ground lemon peel and a few sqeezes of lemon juice to taste; you can add any fruits, etc. I also put in some food coloring to add some fun. This is a good 'base' cake. Preparation and cooking time is approximated as I didn't keep track of that while making the cake. Cooking time does not include cooling. According what I calculated, the whole recipe is appx. 510 calories, so one serving if you cut it into 8 slices would be appx. 63.75 calories. Yay! An edit, after having tried it again: it does taste a bit eggy, feel free to expiriment and change the eggs a bit. I do like it, though, and the second time it turned out better than the first. It was amazing with pudding on top of it, and the whole pan got eaten up by friends. I will be making this many times and I will put up any improvements when I do encounter them.

Steps:
- Spray cake pan with PAM and preheat oven to 350°F.
- Beat egg whites in a bowl until very thick.
- In a separate bowl, beat egg yolks with applesauce and flour; this is the step I added in the ground lemon peel and lemon juice.
- Fold in egg yolk mixture to egg whites, and transfer to cake pan.
- Bake in oven until toothpick comes out clean and let cool.
EASY TEA CAKES
Steps:
- Preheat the oven to 350 degrees F.
- Cream the butter and sugar, about 4 minutes. Add the eggs and mix thoroughly. Then add the milk and gradually add the flour, making a light, soft dough. Roll the dough out so it¿s very thin. Cut into rounds and put on a buttered baking pan. Bake until the cakes are yellowish in color, about 8 minutes.
LOW-FAT CHEESECAKE
This cheesecake takes advantage of lower-fat ingredients but still hits all the rich, creamy notes of a traditional version.

- Preheat the oven to 350 degrees F. Wrap the outside of a 9-inch springform pan with foil to prevent leaks. Coat the inside of the pan with cooking spray.
- Pulse the graham crackers in a food processor until crumbled. Add 1 to 2 tablespoons water and the butter; pulse until moistened. Press the crumbs onto the bottom of the prepared pan. Bake until browned, about 8 minutes. Let cool, about 10 minutes.
- Meanwhile, beat both cream cheeses and the sugar with an electric mixer on medium-high speed until smooth, about 5 minutes. Beat in the sour cream on low. Lightly whisk the 3 egg whites in a bowl, then add to the cheese mixture along with the 2 whole eggs, flour, vanilla and lemon zest. Beat on medium speed until fluffy, about 3 minutes. Pour over the crust.
- Place the cheesecake in a roasting pan and add enough warm water to come one-quarter of the way up the sides of the springform. Bake until the cake is set but the center still jiggles, about 1 hour 10 minutes. Turn off the oven; keep the cheesecake inside with the door closed for 20 minutes.
- Remove the cake from the water bath and transfer to a rack. Run a knife around the edge, then cool completely. Chill until firm, at least 8 hours. Top as desired.

- Preheat the oven to 350°F (180°C). Grease and line 2 9-inch (22 cm) round cake pans with parchment paper.
- In a large bowl, cream the butter and sugar with an electric hand mixer on medium speed until light and fluffy, 3-5 minutes, stopping to scrape down the sides of the bowl 2-3 times. Add eggs and the egg yolk, 1 at a time, beating for 30 seconds between each addition, or until just combined. Add the vanilla and beat until incorporated.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add ¼ of the dry ingredients to the batter and beat on medium speed for about 30 seconds, or until fully combined. Add ¼ of the buttermilk and mix for another 30 seconds, until well incorporated. Continue alternating with the remaining dry ingredients and buttermilk. Beat for 3 minutes more.
- Divide the batter evenly between the prepared pans. Bake the cake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Remove the cakes from the oven and let cool slightly, then remove from the pans and let cool completely on a wire rack.
- Make the frosting: In a large bowl, cream together the butter, cocoa powder, and salt with an electric hand mixer on medium speed until very thick and well incorporated, about 3 minutes. Scrape down the sides of the bowl.
- Turn the mixer speed to low and gradually alternate adding the powdered sugar and milk. As the sugar is incorporated, increase the speed of the mixer. Add the vanilla and beat until the frosting is smooth and fluffy, about 1 minute.The frosting will keep in an airtight container in the refrigerator for up to 1 week. Bring to room temperature before frosting the cake.
- Add a small dollop of frosting to a cake stand. Arrange four pieces of parchment paper around it. Place 1 cake round on the stand. Add a large dollop of frosting to the top of the first cake and spread evenly. Add the remaining cake layer on top and frost completely.
- Decorate the top with rainbow sprinkles, if desired.
- Remove the parchment paper. Slice and serve.

These tea cakes are make with xylitol sugar substitute and butter to cut down on calories but not on taste. Very, very good.

- Beat butter until soft. Gradually add the xylitol and beat well.
