Creamy Guilt-Free Fudge image

This creamy fudge is everything you would expect in a fudge; creamy, very chocolate-y, and addictive. It has reduced fat ingredients to take away some the guilt associated with a dessert of such proportions.

⅔ cup low-fat sweetened condensed milk
1 ½ cups semi-sweet chocolate chips
¾ teaspoon vanilla extract
1 pinch salt

Steps:

  • In a medium-sized saucepan, melt chocolate chips in sweetened condensed milk over medium-low heat. Stir in vanilla and salt.
  • Pour chocolate mixture into ungreased 10 inch square pan. Chill several hours until set. Cut into squares.

1 1/2 cups Splenda granular
2/3 cup evaporated 2% milk
2 tablespoons butter
1/4 teaspoon salt
2 cups miniature marshmallows
1 1/2 cups semi-sweet chocolate chips
1 teaspoon vanilla

Steps:

  • Combine Splenda, evaporated milk, butter and salt in a medium size heavy saucepan.
  • Bring to a full rolling boil over medium heat, stirring frequently.
  • Boil and stir 5 minutes. Remove from heat.
  • Stir in marshmallows, chocolate chips and vanilla until completely melted and smooth.
  • Pour mixture into foil-lined 8-inch square pan. Refrigerate at least 2 hours or until firm to the touch.
  • Remove foil from pan and fudge. Cut into squares.
  • Refrigerate any remaining fudge.

1 (7 ounce) jar marshmallow creme
2/3 cup fat-free evaporated milk
1/2 cup butter, cubed
2 teaspoons vanilla
3 cups semi-sweet chocolate chips
2 cups chopped pecans

Steps:

  • Line a 9-in square pan with foil and spray the foil lightly with non-stick cooking spray; set aside.
  • In a large saucepan, combine the marshmallow creme, evaporated milk and butter.
  • Cook over medium heat stirring constantly until smooth.
  • Bring to a rapid boil and boil for 5 minutes while continuing to stir.
  • Remove from heat and add vanilla.
  • Stir in the chocolate until melted and smooth.
  • Add pecans and mix well.
  • Pour into prepared pan and refrigerate for 2 hours or until firm.
  • The cook time reflects the time need to thoroughly chill the fudge.
  • When firm remove foil from pan and peel away foil from fudge.
  • Using a pizza cutter; cut into 1-inch squares.
  • Store in a tightly covered container in the refrigerator.

Rich, chocolatey, homemade sugar free chocolate fudge.

1/2 cup coconut butter ((120g))
1 overripe banana, (or 2/3 cup additional coconut butter (160g))
scant 1/8 tsp salt
pinch uncut stevia OR 2 tbsp pure maple syrup or honey
1/4 cup cacao or cocoa powder ((40g))
optional 1/2 tsp cinnamon
optional 1/2 tsp pure vanilla extract

Steps:

  • Make sure your coconut butter is melted before starting. Combine all ingredients in a food processor. Then smooth the fudge into a container or candy molds. Plastic containers work well, because you can pop the fudge right out. Place in the fridge for a few hours, or freeze for a few minutes. You can freeze it for longer periods of time; just be sure to thaw at least 15-20 minutes prior to eating.View Nutrition Facts

  • Break the chocolate into pieces and pop into a microwave safe jug or bowl. Put the jug in the microwave and cook on high for 1 minute. When done, give the chocolate a stir and then keep microwaving in 20 second bursts until the chocolate is fully melted. It takes a total of 1 minute and 40 seconds in my microwave. If you don’t have a microwave, don’t worry. You can melt the chocolate on the stove using a double boiler. Easy!
  • Mix the butter (or coconut oil), almond butter, vanilla powder and 1/2 of the pistachios and freeze dried berries into the chocolate. Don’t worry about using another bowl, that’s just more to clean! When the chocolate mixture is fully combined pour it into your lined tin and place in the refrigerator.
  • After 15 minutes, sprinkle the other half of the pistachios and freeze dried berries over the top of the fudge and refrigerate for another hour, or until set. If you’re in a hurry, pop it in the freezer so it sets more quickly.
