This recipe is an easy method for cooking a perfect prime rib with a classic au jus sauce, every single time. It's perfect for the holidays or a party.

For the Prime Rib:
1 standing beef rib roast (4 to 7 ribs, 9 to 18 pounds)
Black pepper to taste (fresh, coarse-ground)
2 to 3 teaspoons kosher salt (or other larger grain, flake-style sal)
2 to 3 tablespoons butter (softened)
For the Au Jus:
2 tablespoons all-purpose flour
1-quart beef broth (cold, 4 cups)

Steps:

  • Gather the ingredients.
  • Remove the prime rib from the refrigerator and place it in a large roasting pan with at least 3-inch sides.
  • Rub the entire surface of the roast with the butter and coat evenly with salt and pepper. Let the prime rib stand at room temperature for 2 hours.
  • Preheat the oven to 450 F. When the oven is hot, put the roast in and cook for 20 minutes to sear the outside of the roast. After 20 minutes, reduce the oven temperature to 325 F and roast until the desired internal temperature is reached (see below). For medium-rare meat, this will take approximately 15 minutes per pound.
  • Transfer the roast to a large platter and loosely tent it with foil. Let it rest for 30 minutes before serving.
  • Gather the ingredients for the au jus.
  • Pour off all but 2 tablespoons of the fat from the roasting pan and place the pan on the stovetop over medium heat.
  • Add the flour. Cook, while stirring, for 5 minutes to form a roux or paste.
  • Pour in the beef broth and whisk, scraping all the caramelized beef drippings from the bottom of the pan. Increase the heat to high and cook the sauce, whisking often, for 10 minutes or until it reduces and thickens slightly.
  • Adjust the seasoning, strain, and serve alongside the prime rib in a gravy boat or pourable bowl.

A classic holiday dish made into a low sodium centerpiece for a new heart healthy tradition.

4 lbs Bone-in Prime Rib Roast ((ask your butcher to trim & tie it to make it easier to roast))
4 tbsp Olive Oil ((enough to coat both sides of the roast))
2 tbsp Fresh Ground Black Pepper
2 tbsp Garlic Powder
2 tbsp Onion Powder
2 tbsp Fresh Rosemary (chopped)
1 tsp Sweet Paprika
1 tbsp Stone Ground Mustard (lowest sodium possible)
2 cloves Garlic (minced)

Steps:

  • 2 hours prior to cooking - In a small bowl (or in a mortar and pestle) add the black pepper, garlic powder, onion powder, Rosemary, Paprika, Mustard, and minced garlic and mix thoroughly to create the rub that will create that lovely crust on the outside of the meat). Rub the roast thoroughly with Olive Oil to coat the roast which will allow the rub to stick to it. Next, generously coat the roast with the spice rub and coat completely. Place the roast on a plate in your refrigerator until 30 minutes before cooking.
  • 30 minutes before cooking - Take the roast out of the fridge and allow it to come to room temperature (30 minutes). Also, preheat your oven to 450 degrees F and allow to heat while the roast is coming up to room temperature.
  • Place the roast on a rack in a roasting pan, the fat side should be facing up and bone side down.
  • Cook your roast for 15 minutes, then reduce the oven temperature to 325 degrees F. Continue to cook your roast until your meat thermometer reads 125 degrees F. Check the temperature at the thickest part of the roast. Make sure the thermometer is not touching the bone to get a true reading. Estimate about 15 minutes of cooking time per pound of prime rib.
  • Once the thermometer hits its target temperature, remove the roast from the oven, cover it in foil, and let it rest for 20 minutes. At this time, use the pan drippings to create your au jus (instructions below). The roast will continue to cook as the juices inside settle, raising the internal temperature to 135 degrees F, and then it will come back down to 125 in that 20 minutes. Untie the roast and slice and serve for a perfect prime rib.

1 bone-in prime rib (6 to 7 pounds)
8 cloves garlic, thinly sliced
Salt and coarsely ground black pepper
2 cups red wine
4 cups beef stock
1 tablespoon chopped fresh thyme leaves

Steps:

  • Thirty minutes before roasting the prime rib, remove from the refrigerator and let come to room temperature.
  • Preheat oven to 350 degrees F.
  • Make small slits all over the prime rib and fill each slit with a slice of the garlic. Season liberally with the salt and coarse pepper, place on a rack set inside a roasting pan and roast for about 2 hours until medium-rare, or until a thermometer inserted into the center of the meat registers 135 degrees F. Remove the meat to a platter, and tent with foil to keep warm.
  • Place the roasting pan on top of the stove over 2 burners set on high heat. Add the wine to the pan drippings in the pan and cook over high heat until reduced, scraping the bottom of the pan with a wooden spoon. Add the stock and cook until reduced by half. Whisk in the thyme and season with salt and pepper, to taste.
  • Slice meat as desired and serve with thyme au jus.

2 tbsp Beef Drippings or Unsalted Butter ((*Note 1))
2 tbsp All-purpose Flour
3 Cups Beef Consommé or Stock
1/2 tsp Soy Sauce or Worcestershire sauce
Sea Salt, To Taste ((*Note 2))
Black Pepper, To Taste
1 tbsp Beef Drippings or Unsalted Butter ((*Note 1))
1/4 Cup Dry Red Wine ( (*Note 3))
1/4 Cup Finely Diced Shallots
1 tbsp All-purpose Flour
1.5 Cup Beef Consommé or Stock
1 Sprig Fresh Thyme
1 Dried Bay Leaf
Sea Salt, To Taste ( (*Note 2))
Black Pepper, To Taste

Steps:

  • Add the beef drippings (or butter) to a medium saucepan over medium heat (and melt if using butter or cold beef drippings). Sift the flour over the drippings/melted butter and whisk for 30-45 seconds.
  • Add 1 cup of beef broth and whisk to combine. Slowly pour in the remaining beef broth while continuing to whisk. Increase the heat to medium-high and add the soy sauce, sea salt, and black pepper.
  • Simmer for 4 minutes, allowing to reduce. Taste and adjust seasonings, if needed.
  • Add the beef drippings (or butter) to a medium saucepan over medium heat (and melt if using butter or cold beef drippings).
  • Add the shallots and cook for 30 seconds, stirring occasionally.
  • Add the red wine and cook until the wine is reduced by about half (Tip- You should no longer smell the wine).
  • Sift the flour over the red wine mixture and whisk for one minute.
  • Add 1/4 cup of beef consommé and whisk. Add the rest of the beef consommé, thyme, bay leaf and black pepper. DO NOT add the salt until the end after you've tasted the reduced sauce.
  • Simmer on low for 3-4 minutes to further reduce the au jus. Fish out the thyme sprig and bay leaf and discard. Taste and adjust seasonings, if needed.

This particular recipe has brought me success both in personal and professional cooking. The recipe is written for a 10-pound loin, but, can be modified by size. It gives the prime rib a nice crust exploding with flavor, and an interior so tender, it'll (hopefully) leave you wanting more.

1 (10 pound) prime rib loin roast
2 cups concentrated beef base (paste)
1 clove garlic, minced
½ cup chopped fresh thyme
½ cup dried oregano
½ cup whole black peppercorns
2 teaspoons salt
2 ½ cups water
1 tablespoon concentrated beef base (paste)
2 tablespoons dry red wine
1 teaspoon finely chopped fresh thyme
1 teaspoon dried oregano
½ teaspoon garlic powder
1 stalk celery, quartered
½ white onion, coarsely chopped
½ carrot, peeled and coarsely chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Trim any thick pieces of dense, hard fat from the roast, but leave smaller areas of fat in place.
  • In a bowl, mix 2 cups of beef base with minced garlic, and rub the mixture generously all over the roast. Sprinkle the roast with 1/2 cup of fresh thyme, 1/2 cup of oregano, the black peppercorns, and salt. Place into a roasting pan.
  • Roast in the preheated oven until the meat has formed a brown crust and a quick-read meat thermometer inserted into the thickest part of the roast measures 135 degrees F (57 degrees C), for medium-rare, about 3 hours. If you prefer the meat well-done, roast an additional 45 minutes. Remove roast from oven, and allow to stand while you make the sauce. Temperature of the meat will rise about 10 more degrees as it rests.
  • Pour the water into a saucepan, and dissolve 1 tablespoon of beef base in the water. Mix in the red wine, and stir in 1 teaspoon of thyme, 1 teaspoon of oregano, and the garlic powder. Add the celery, onion, and carrot pieces to the sauce. Bring the mixture to a boil, and cook, stirring often, until the sauce reduces by half, 20 to 30 minutes. Strain sauce and discard vegetables before serving sauce with the roast.
