Traditional flour tortillas - homemade and much better than store bought. Do not substitute vegetable oil or shortening for the lard.

Steps:
- Whisk the flour, salt, and baking powder together in a mixing bowl. Mix in the lard with your fingers until the flour resembles cornmeal. Add the water and mix until the dough comes together; place on a lightly floured surface and knead a few minutes until smooth and elastic. Divide the dough into 24 equal pieces and roll each piece into a ball.
- Preheat a large skillet over medium-high heat. Use a well-floured rolling pin to roll a dough ball into a thin, round tortilla. Place into the hot skillet, and cook until bubbly and golden; flip and continue cooking until golden on the other side. Place the cooked tortilla in a tortilla warmer; continue rolling and cooking the remaining dough.

- In a large bowl, combine flour and salt. Stir in water and oil. Turn onto a floured surface; knead 10-12 times, adding a little flour or water if needed to achieve a smooth dough. Let rest for 10 minutes., Divide dough into 8 portions. On a lightly floured surface, roll each portion into a 7-in. circle., In a greased cast-iron or other heavy skillet, cook tortillas over medium heat until lightly browned, 1 minute on each side. LOW SODIUM FLOUR TORTILLAS
Store bought flour tortillas are sky high in sodium for just one tortilla. Try these Low Sodium Flour tortillas that have almost ZERO sodium!

- Place water and oil in bread pan, then flour and no sodium baking powder along with optional seasoning. Place on Dough Only cycle and let your machine cycle go about 3/4 until kneading is finished. It does not need a rise time.
- Combine flour and baking powder in the bowl of a stand mixer. Using the dough hook, mix dry ingredients until well combined.
- Add oil and water with mixer running at a medium speed. After about 1 minute, or when mixture comes together and begins to form a ball, decrease mixing speed to low. Continue to mix for 1 minute or until dough is smooth.
- Place dough ball on a lightly floured work surface. Divide into 10 equal portions. Form each piece into a ball and flatten with the palm of your hand and sprinkle with flour. Cover flattened balls of dough with a clean kitchen towel and allow to rest for at least 15 minutes.
- After the rest period, heat a large pan over medium heat. Roll each dough piece into a rough circle, about 6-7 inches in diameter, roll from center out. Keep work surface and rolling pin lightly floured. Don't stack uncooked tortillas on top of each other or they will stick together. I roll when one is cooking but you need to be quick.
- When the pan is hot, place one rolled dough circle into the pan and allow to cook about 45 seconds or until the bottom surface has a few light brown spots and the top surface is bubbly. Flip to other side and cook for 15-20 seconds. The tortillas should be nice and soft but have a few small brown spots on the surface. Increase or decrease pan heat so total cooking time is just over 1 minute.
- Remove from pan with tongs and stack on cloth covered plate to keep the tortillas soft.
- Store in an airtight container or Ziploc bag and refrigerate for up to 1 week. To freeze, separate tortillas with parchment paper or waxed paper and place in a Ziploc bag and plce in the freezer.

SPICY BAKED TORTILLA CHIPS LOW SODIUM LOW FAT
I can not believe it took me so long to make these. There are a million recipes online, some have a little of this, or a little of that. This is my version and now I will be making these in bulk, so so so delicious and NO GUILT.

- Cut your corn tortillas into quarters. This can be made with flour tortillas too, but the fat and sodium grams dramatically increase. I can find corn tortillas with 0 sodium and 1 gr. of fat. Spray oil will add a little more fat, but it's miniscule.
- Lay your cut tortillas on a baking sheet, spray the top of them with spray oil, sprinkle your favorite seasonings. I used Mrs. Dash Southwest Chipotle. this created a little "zing" in the flavor, next time I will be trying the Zesty Lime from Mrs. Dash.
- Bake 400° for 6-10 min. Cooking time in ovens vary, so check your chips after 6 min. and adjust time accordingly. The edges will start to lift up slightly when crispy.

Finally--it's the tortilla you've been waiting for! These low-carb tortillas are simple to make and require only three ingredients, yet they make delicious wraps for sandwiches and burritos! They are suitable for low-carb, ketogenic, diabetic, and LC/HF diets.

- Preheat oven to 375º F. Cut 5 pieces of parchment about 14 inches long. Have a rolling pin and 2 cookie sheets available.
- Place mozzarella cheese, almond flour and salt in a food processor. Pulse to chop mozzarella and combine all ingredients well. Mixture should appear mealy.
- Transfer mixture to a large, heavy saucepan. Heat over low heat while stirring constantly.
- As the cheese melts, the ingredients will start to develop a doughy appearance. When it starts to hold together in a ball, turn it out onto a piece of parchment paper.
- While the dough is hot, but not hot enough to burn your hands, kneed the dough to completely mix the ingredients. Divide the dough into 4 equal sections. Place three of the sections back in the warm pan (but not over heat) to keep them warm while you work.
- Form one section into a ball and place on a piece of parchment paper. Pat into a disk shape, then cover with another piece of parchment. Using the rolling pin, roll into about a 9 inch circle. Place the circle of dough on half of the parchment lined baking sheet. Set aside.
- Repeat for the second ball of dough and place it on the other side of the baking pan. Repeat for the other two pieces of dough.
- Bake the tortillas for 5-7 minutes or until the outside edges just begin to brown. Watch them carefully as it is easy to burn them. Allow them to cool slightly before gently loosening them with a spatula and removing them from the pan.
- Fill tortillas with filling of choice while they are slightly warm for best results. Refrigerate any extras in an airtight container. Warm leftover tortillas gently before using.

- 1. STAND MIXER METHOD: Add flour, seasoning if desired, water and oil. Using a dough hook, set on stir and let the dough mix. Scrape the sides of bowl after a few minutes. Let the machine work the dough for about 7-8 min. Add more flour as dough is working if it is sticking to sides or bottom of mixing bowl.
- 2. BREAD MACHINE METHOD: Place water and oil in bread pan, then salt if desired, then flour. Place on Dough Only cycle and let your machine do the work.

HOW TO MAKE LOW CARB TORTILLA
These low carb tortillas are made with almond flour, oat fiber, and psyllium husk. Soft, yet pliable, these keto friendly wraps are perfect for burritos, tacos, quesadillas, and nachos!

- Combine dry ingredients. Add almond flour, oat fiber, psyllium husk, and salt to a large bowl and combine well.
- Mix in wet ingredients. Add apple cider vinegar and then begin adding warm water a small amounts at a time mixing in between until the dough is completely saturated and smooth. About 3/4 to 1 cup of water should be enough.
- Rest the dough. Set the mixed tortilla dough aside and allow it to rest for at least 5 minutes.
- Form the Tortillas. Grab a fistful of dough and roll loosely into a ball with your hands. Place the dough ball on a square of parchment paper and cover with an additional piece of parchment sandwiching the dough in between.
- Roll out the dough. Start flattening the dough between the parchment with your hands. Finish rolling out the dough with a rolling pin until you have a thin sheet. The dough will not rise when cooking so roll it as thin as you want the tortillas. Peel back the top piece of parchment to expose the sheet of tortilla dough.
- Cut to shape. For perfectly round tortillas, take a small plate, pot lid, or bowl and place it rim side down on the sheet of dough. Use a small knife to trace the shape and cut the dough into a round shape.
- Cook the tortillas. Heat a non-stick pan to medium-low heat. Remove the remaining parchment backing from the formed tortilla. Try flipping the open face over onto your hand and peeling off the backing. Cook each tortilla on its own for 1 1/2 to 2 minutes on the first side, and 30 seconds to 1 minute on the remaining side.
- Cover cooked tortillas. Transfer cooked tortillas to a paper towel and cover with a tea towel or a tortilla warmer while you cook the remaining tortillas.
- Serve and Enjoy! Serve your low carb tortillas right away or cool and store for later use! Perfect for low carb tacos, fajitas, burritos, mini pizzas, nachos, and wraps!

OUR FAVORITE SOFT FLOUR TORTILLAS
How we make flour tortillas that are soft, pliable and perfect for folding or wrapping. We incorporate a few tricks in the recipe for the best results. Dissolving the salt into the warm water helps season the dough. I especially recommend doing this if you are using a coarser salt. Rolling the tortillas very thin and getting the heat of your pan right makes sure that bubbles start to form (our video shows just how large these bubbles can be). It's these bubbles that create the perfect texture.

- Add the salt to the warm water and stir together until the salt has dissolved.
- In a large bowl, use a fork to combine the flour with the oil (or other fat) until it looks crumbly. Pour in almost all of the salty water and stir until a shaggy dough forms. If the mixture seems dry, add a bit more of the water.
- When the dough comes together, transfer to a floured work surface and knead until smooth, two to three minutes. Cover with a clean dish cloth and leave for at least 15 minutes and up to an hour or two. Resting the dough makes rolling it out easier.
- Divide the dough into ten equally sized blobs and then shape into small disks. Use a rolling pin to roll each small disc into 8-inch rounds or use a tortilla press. The thinner the better, here. If you happen to get 9-inch tortillas, don't worry! We also don't worry too much about making them perfectly round. (See our video to watch us do it.)
- Stack the rolled tortillas with a piece of parchment paper between them. Alternatively, you can roll and cook the tortillas at the same time. Roll one tortilla out, then while it cooks, roll the next tortilla out.
- Make ahead: Divide the dough into smaller balls (this recipe makes ten 8-inch tortillas), wrap them very well, and then place into the refrigerator up to three days. About thirty to forty minutes before you are ready to cook the tortillas, take the balls out of the refrigerator and let them come to room temperature before rolling them out.
- Heat a wide, heavy-bottomed skillet over medium-high heat. When it's hot, add the first tortilla. Within 20 to 30 seconds, you should start to see it puffing up with bubbles forming.
- When the bottom of the tortilla has some brown spots, flip it and cook until the second side is browned in spots and the tortilla looks dry around the edges. Each tortilla will take 1 to 2 minutes to cook. If this is taking a long time, increase the heat. If the pan starts to smoke or brown the tortillas too quickly, turn the heat down a bit.
- Transfer the cooked tortilla to a dish towel and cover it then continue with the remaining tortillas, adjusting the heat as needed.
- Store leftover tortillas in a resealable plastic bag for a day or two or freeze if needing to store longer. Fresh homemade flour tortillas are in their softest state when warm so if you have room temperature or cold tortillas, we recommend reheating them in a skillet until they are warm and pliable again.
