BROCCOLI CHEESE CASSEROLE
Deliciously cheesy broccoli casserole will convince even the most reluctant picky eaters that broccoli is in fact worth eating.

Steps:
- Preheat oven to 400 degrees F. Spray a 2-quart baking dish with olive oil.
- Place the broccoli florets in a large microwave-safe bowl. Add 2 tablespoons water. Cover and microwave on high until tender-crisp, about 3 minutes.
- Meanwhile, in another large bowl, prepare the creamy sauce. Mix together the mayonnaise (or sour cream), Dijon mustard, kosher salt, black pepper, garlic powder, cayenne pepper and half of the grated cheddar cheese. Add a little water to thin out the mixture, about 1 tablespoon.
- Drain the broccoli well and add it to the creamy sauce. Gently toss to coat.
- Transfer the coated broccoli to the prepared baking dish. Lightly spray the top with olive oil. Evenly sprinkle the remaining cheddar on top.
- Bake the casserole until golden brown and bubbly around the edges, 15-20 minutes. Let it rest for 5 minutes before serving.

AWESOME BROCCOLI-CHEESE CASSEROLE
My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
- In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
- Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
- Bake for 45 minutes to 1 hour.

Steps:
- melt butter in pan.
- add chopped onions, saute until clear.
- add brick of frozen chopped broccoli.
- cover pan to help heat melt down/break up broccoli brick.
- stir in can of soup.
- stir in grated cheese.
- once items above are well combined, add cooked white rice.
- let simmer on low for 10 to 15 minutes.

- Press the Saute button on the 10 QT Crock-Pot Express Easy Steam Release Pressure Cooker. Press Start (no need to adjust the time). Add the butter and wait for it to melt. Use a spatula to shift it to the center if it goes off to the sides. Add the minced garlic. Saute for about 1 minute, until fragrant.
- Add the chicken broth right away once the garlic is done, to prevent burning it. Then, add the broccoli florets. Stir.
- Cover the Crock-Pot pressure cooker with the lid - line up the arrow with the unlock symbol, then twist counterclockwise so that the arrow lines up with the lock symbol. Turn the Steam Release Dial to the Seal position (the one with an X over it).
- Press the Steam button. Use the minus button to reduce the time to 1 minute. Press Start. The pressure cooker will come up to pressure (about 5 minutes), cook for 1 minute, and then beep to signal it's done. It will switch to the Warm setting (you'll see a light) and start counting up.
