Flavorful, homemade sausage patties without the salt! Perfect for people who are trying to cut back on the salt.

1 1/4 lb ground pork
1 egg (beaten)
1 tsp dried sage
1 tsp dried thyme
1/2 tsp fennel seed
1 dash red pepper flakes
1/4 tsp black pepper
1/4 tsp salt
2 tsp brown sugar

Steps:

  • Combine all ingredients in a bowl.
  • Using your hands, mash all together until very well mixed.
  • Using a heaping tablespoon, form 12 patties. The mixture will be fairly wet, but will come together with some love!
  • Heat a nonstick skillet over medium high heat. Cook patties 4-5 minutes per side.

8 ounces Honeysuckle White® Lean Ground Turkey
2 tablespoons Apple juice, unsweetened
½ teaspoon thyme, dried OR 1 ½ teaspoons fresh thyme
1 teaspoon poultry seasoning
1 teaspoon sage, dried
½ teaspoon black pepper
½ teaspoon red pepper flakes

Steps:

  • Using your hands, thoroughly combine all ingredients in a mixing bowl.
  • Fold a 12" sheet of waxed paper in half. Divide the sausage mixture into eight equal portions (about one tablespoon each.) and roll into balls using your hands.
  • Place the balls on one side of the waxed paper, fold the other side over, and press to flatten the sausage into patties.
  • Coat a nonstick skillet with cooking spray. Cook the sausage over medium-high heat for 8 to 10 minutes, turning halfway.
  • Sausage should cook until the internal temperature reaches 160° Fahrenheit.

2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon red pepper flakes
¼ teaspoon dried marjoram
2 pounds ground turkey

Steps:

  • Mix sage, salt, black pepper, red pepper flakes, and marjoram together in a small bowl. Place turkey in a large bowl and mix the spice mixture into the turkey using your hands; form into patties.
  • Cook patties in a large skillet over medium-high heat until no longer pink in the center and the juices run clear, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

If you're looking for a new twist on turkey, Ruby Bergschneider's recipe may just be the one. The Jacksonville, Illinois cook prepares a well-blended, salt-free rub that goes under the turkey skin. She removes the skin before eating, resulting in a low-fat entree. This recipe proves that you don't need a lot of salt for good flavor.

6 garlic cloves, minced
2 tablespoons plus 2 teaspoons rubbed sage
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
2 teaspoons pepper
1/2 teaspoon each ground allspice, ginger and mustard
1/4 teaspoon cayenne pepper
1 tablespoon all-purpose flour
1 turkey-size oven roasting bag
2 celery ribs, chopped
2 small carrots, chopped
1 small onion, chopped
1 small potato, sliced
1 turkey (14 pounds)
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • Preheat oven to 350°. In a small bowl, mix garlic, herbs and spices until blended. Sprinkle flour into oven bag; shake to coat. Place bag in a roasting pan; add vegetables and sprinkle with 5 teaspoons herb mixture., Pat turkey dry. With fingers, carefully loosen skin from turkey breast; rub half of the remaining herb mixture under the skin. Secure skin to underside of breast with toothpicks. Rub remaining herb mixture over inside of turkey. Tuck wings under turkey; tie drumsticks together., Place turkey in bag over vegetables, breast side up; close bag with nylon tie. Cut six 1/2-in. slits in top of bag; close with tie provided. Bake 2 to 2-1/2 hours or until a thermometer inserted in thickest part of thigh reads 170°-175°. , Remove turkey from oven bag to a serving platter; tent with foil. Let stand 20 minutes before carving. Strain contents of oven bag into a small saucepan, discarding vegetables; skim fat from cooking juices. In a small bowl, mix cornstarch and water until smooth; gradually whisk into cooking juices. Bring to a boil; cook and stir 2 minutes or until thickened. Serve with turkey.
