Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease 3 small loaf pans.
- Mix flour, baking soda, and salt together in a bowl.
- Beat butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add 1 egg and allow to blend into the butter mixture before adding the second egg along with vanilla extract. Beat mashed bananas thoroughly into the mixture. Add flour mixture in small increments while beating until just combined into a thick batter. Fold blueberries into the batter; pour into prepared loaf pans.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

LOW GI BLUEBERRY & BANANA BREAD
When I found this I really questioned whether it was low GI because of the honey used. But, I tried it anyway, I loved that it uses buckwheat, and macadamia oil. Anyhow it was really good, I also added some chopped dried pears as suggested in the recipe and it turned out beautifully. You can serve it plain or toasted with cottage cheese or ricotta and topped with fresh fruit like sliced banana, mango, passionfruit or peach and raspberry. Cooking times may vary, the recipe says 50min, but I needed to cover half way and leave it for 65 minutes.

- Meanwhile, in a bowl, whisk together the flour, baking powder, cinnamon, nutmeg and salt. Set aside. Grease a 9-inch x 5-inch non-stick loaf pan with baking spray or (grease with butter) and set aside.Note: You can also line the loaf pan with some parchment paper, allowing some parchment paper to overhang over the sides of the the pan (so you can easily remove the loaf once it's baked and cooled). I like to grease the parchment paper too.
