LOW FAT/LOW SODIUM BLACK BEAN SOUP
I made this recipe after viewing several recipes from various cook books. Broth is a no sodium brand and the bean were dry (cooked in advance only in water- no seasoning was added)

Steps:
- heat oil in stock pot over medium heat.
- add the veggies and saute for about 5 minutes, stirring from time to time.
- add the seasoning and stir to combine.
- continue to saute until the veggies are tender.
- add the remaining ingredients and stir, cover.
- continue to cook at set temperature for 10 minutes.
- reduce heat to low and simmer for 30 minutes.

BUDGET-FRIENDLY BLACK BEAN SOUP
This is yummy, and can be made as healthy or unhealthy as you like by using full ingredients, or substituting low fat, low sodium items.

Steps:
- Before beginning, drain and rinse two of the cans of black beans and set aside.
- Using a potato masher, mash up the remaining can of beans with the juice.
- Add the salsa and cumin to the mashed beans and set aside.
- In your pot, combine the broth, water and onion, and bring to a boil.
- Simmer till onions are tender.
- Add the rinsed and mashed beans and stir well.
- Simmer at a low heat for half an hour or so.
- Serve with a dollop of sour cream.

SO GOOD HEART HEALTHY BEAN SOUP (SLOW COOKER)
This is a basic bean soup recipe adapted to make it low on fat and sodium and therefore more healthy. My friends like it very much and I hope you will, too. I like to use the packaged 15 mixed dry beans but you can use any dry beans or mixed dry beans you prefer.

- 1. Wash dry beans and soak overnight. Drain and rinse when ready to begin making soup. Place beans in slow cooker and add fresh water. Cover and cook on high for 2 hours. Add all remaining ingredients except pasta and salt. If necessary add more water just to cover ingredients in slow cooker. Cover again and cook on high for 3 hours (or on low for 6 hours). Add pasta and any salt (if you are counting grams of sodium measure salt added and include in amounts listed below) you wish just before serving.

- Pre heat a large pot or soup pot for a few minutes over medium-high heat. Add olive oil when nice and hot, start with the onions and celery and cook for 2 minutes. Then add in the carrot and red pepper for another few minutes stirring occasionally. Finish with the garlic and cook for another 2 more minutes.
- Stir in the black beans, vegetable broth, diced tomatoes, coriander, cumin, oregano, bay leaf and pepper. Turn the heat to low and let simmer for 25 minutes.
- Remove the bay leaf. If you want a thicker creamier soup, use an immersion blender to purée some of the soup for a thicker consistency but don’t blend it completely. If you don’t have an immersion blender, carefully transfer 2 to 3 cups of the soup to a blender and blend until smooth. Stir the pureed soup back into the pot.
