Steps:
- Grease a 9" x 5" loaf pan.
- Preheat the oven to 350°F.
- In a medium bowl, combine the flour, wheat germ, baking powder and baking soda.
- In a separate bowl, combine the eggs, milk, syrup and oil.
- Combine the dry and liquid ingredients, mixing well.
- Pour the batter into the prepared pan.
- Bake for 45 minutes, or until a knife inserted in the center of a loaf comes out dry.

Steps:
- Preheat oven to 350. Spray 8x4" loaf pan with nonstick cooking spray. Measure 2 Tbsp wheat germ; set aside.
- Combine remaining wheat germ, flours, sugar, baking soda, baking powder and salt in large bowl. Add raisins; stir until coated. Beat buttermilk, butter and egg in small bowl until blended. Stir into flour mixture. Pour into prepared pan; sprinkle with reserved 2 Tbsp wheat germ.
- Bake 40-50 minutes or until toothpick inserted into center comes out clean. Cool in pan on wire rack 10 minutes. Remove from pan and cool 30 minutes on wire rack. Serve warm or at room temperature.

- Make the sponge. Combine the 1 cup of whole wheat flour, honey, 1/2 tsp yeast, and water in the bowl of a stand mixer or in a medium bowl and whisk until well-combined and frothy.
- Create a layer over the top of the sponge with the remaining flours, wheat germ, and additional 1/2 tsp of yeast. Cover with plastic wrap and let sit at warm room temperature until the sponge is bubbling through (1-3 hours, this can be flexible to your schedule, see pictures).
- Combine the mixture on low speed using the paddle mixture until the dough starts to come together.
- Switch to the dough hook and add the salt. Knead on medium speed for about 10 minutes using the mixer (longer if doing by hand). The dough will be smooth and not sticky at all.
