Steps:
- Preheat the oven to 180 deg fan assisted. I always use fan assisted oven and use a thermometer to make sure it reaches the correct temperature. TIP: Every oven is different, so if using a conventional oven you may need to increase the temp a little, approx 20 deg. Just make sure it reaches 180 deg as this is what I baked the crumble at.
- Wash and core the apples, no need to peel them, then cut them into chunks about ½ cm in size. Toss the apples in the cinnamon until every piece of apple is coated and flavoured with the cinnamon spice.
- Place the apples into a shallow pie dish about 8 inches in diameter and 2inch deep.
- In a separate bowl, add all the crumble ingredients. Using your finger tips rub the mixture together until you have a rough crumble mixture with not too many large chunks of butter, a few is fine.
- Pour the crumble mix over the top of the apples. Create a slight well around the edges of the pie dish. This will allow for pools of apple juice to collect rather than spill over the sides of the pie dish.
- Bake in the centre of the oven for 30 - 35 mins or until you have a nice golden topping with a few juices bubbling on the side. There may not be too many juices because of the lack of sugar in the apple mixture.
- Allow the crumble to cool before serving with custard, ice cream or thick whipped cream.

Steps:
- Preheat the oven to 350°F. Add apples to a medium size bowl, combining with some sweetener, cinnamon, apple cider vinegar, vanilla extract, cornstarch and kosher salt. Toss to fully combine, then add to a greased casserole dish or cast iron skillet to bake for 30 minutes to soften.
- While the apples are baking, combine almond flour, rolled oats, pecans, coconut flakes, sweetener, cinnamon, kosher salt, and xanthan gum to make the apple crisp topping. Add melted butter and stir to combine to make sure everything is incorporated.
- After the apples have been baking for about 30 minutes, give them a small toss to distribute the sweetener and any liquid that has pooled at the bottom. Add the crumble topping over top of the apples. Return to the oven to bake for another 30 minutes at 350°F.
- Bake, then serve with your favorite ice cream. Allow to cool for at least 10 minutes before serving, as it will be really hot. Save in the fridge in an airtight container for up to 5 days.

- Mix the apple sauce, lime juice and non dairy milk in a bowl and put it in the freezer for 20-25 mins. Prep the ingredients and slice the apple in the meanwhile.
- Toss the sliced apple with maple syrup in a bowl and set aside. In a large bowl, mix the dry ingredients really well.
- Take the milk apple sauce mix bowl out of the freezer. Break any frozen portions into smaller bits. Reserve 2 tbsp and add the rest to the flour bowl and mix. Press and mix. the larger frozen bits of the milk mixture will make the dough sticky later, so press to break those bits and mix. Add in the apples and vanilla extract if using and mix.
- Add the remaining apple sauce mix if needed 1 tbsp at a time to make a stiff-ish dough. The dough should be slightly stiff and just about combined. Transfer the dough to parchment lined baking sheet or stoneware/ceramic dish. Using flour, shape the dough into a somewhat circle of about 3/4 inch height.

- Drain the tin or chop up the real pineapple and put in bowl in freezer (it should take around 2 hours to freeze). Save a few chunks or a ring for garnish.
- When it’s frozen use a hand blender or food processor to blend, along with mint (also keep a few mint leaves aside).
- If you're using fresh pineapple then I suggest blending first and freezing after, it seems to work better.
