BLUEBERRY CRISP

Blueberry Crisp image

This gluten-free and vegan, healthy blueberry crisp is easy to make, oil-free, and perfect for Summer!

Provided by Deryn Macey

Categories     Dessert

Time 1h5m

Yield 6

Number Of Ingredients 10

4 cups fresh blueberries (760 g)
2 tsp cornstarch (5 g)
1 tsp lemon juice (5 ml)
1 cup rolled oats (90 g)
½ cup oat flour (50 g)
2 TB maple syrup (30 ml)
¼ cup unsweetened applesauce (65 g)
1 tsp cinnamon (2. 5 g)
1 tsp vanilla (5 ml)

  • Toss blueberries with cornstarch and lemon juice and add to the baking dish.
  • Combine all topping ingredients in a medium mixing bowl and combine well.
  • Sprinkle topping mixture evenly over blueberries. It likes to clump up in the bowl so make sure to break it up as you add it to the dish.
  • Bake for 35-40 minutes, until the topping is browned and the berries begin to bubble around the edges.
  • Let rest/cool for 15-20 minutes before serving, to allow time for thickening.

LOW SUGAR APPLE CRUMBLE (APPLE CRISP)

Low Sugar Apple Crumble (Apple Crisp) image

A recipe for Low Sugar Apple Crumble (Apple Crisp) with a reduced amount of sugar in the Crumble Topping and no added sugar in the apple filling.

Provided by Lynn Hill

Categories     Dessert

Time 50m

Number Of Ingredients 7

6 small or 4 medium sized dessert apples such as Braeburn
1 teaspoons ground Cinnamon or add to taste if you like a lot of cinnamon
150 g plain flour
30 g soft brown sugar
150 g butter of baking spread such as margarine
100 g ground almonds
¼ teaspoons ground cinnamon

Steps:

  • Preheat the oven to 180 deg fan assisted. I always use fan assisted oven and use a thermometer to make sure it reaches the correct temperature. TIP: Every oven is different, so if using a conventional oven you may need to increase the temp a little, approx 20 deg. Just make sure it reaches 180 deg as this is what I baked the crumble at.
  • Wash and core the apples, no need to peel them, then cut them into chunks about ½ cm in size. Toss the apples in the cinnamon until every piece of apple is coated and flavoured with the cinnamon spice.
  • Place the apples into a shallow pie dish about 8 inches in diameter and 2inch deep.
  • In a separate bowl, add all the crumble ingredients. Using your finger tips rub the mixture together until you have a rough crumble mixture with not too many large chunks of butter, a few is fine.
  • Pour the crumble mix over the top of the apples. Create a slight well around the edges of the pie dish. This will allow for pools of apple juice to collect rather than spill over the sides of the pie dish.
  • Bake in the centre of the oven for 30 - 35 mins or until you have a nice golden topping with a few juices bubbling on the side. There may not be too many juices because of the lack of sugar in the apple mixture.
  • Allow the crumble to cool before serving with custard, ice cream or thick whipped cream.

Sugar Free Apple Crisp (Gluten Free, Low Carb) image

This healthy apple crisp recipe is refined sugar free, low in carbs - the ultimate fall dessert. Skip peeling the apples, this recipe is super pretty, tasty and no frills.

Provided by Briana

Categories     Dessert

Time 1h10m

Number Of Ingredients 16

2 pounds apples of choice, cored and cut into bite sized pieces ((we used Sweetango apples, which are similar to honeycrisp))
2 teaspoons cinnamon
2 tablespoons apple cider vinegar ((30 ml))
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
1/4 cup granular erythritol ((48 grams))
1/2 tablespoon cornstarch ((increase to 1 tablespoon for a thicker filling) )
1/2 cup gluten free rolled oats (48 grams )
1/2 cup shredded unsweetened coconut flakes (40 grams )
2/3 cup almond flour (75 grams )
2/3 cup pecan pieces (80 grams )
1/4 cup granular erythritol (48 grams )
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/4 teaspoon xanthan gum
8 tablespoon unsalted butter, melted

Steps:

  • Preheat the oven to 350°F. Add apples to a medium size bowl, combining with some sweetener, cinnamon, apple cider vinegar, vanilla extract, cornstarch and kosher salt. Toss to fully combine, then add to a greased casserole dish or cast iron skillet to bake for 30 minutes to soften.
  • While the apples are baking, combine almond flour, rolled oats, pecans, coconut flakes, sweetener, cinnamon, kosher salt, and xanthan gum to make the apple crisp topping. Add melted butter and stir to combine to make sure everything is incorporated.
  • After the apples have been baking for about 30 minutes, give them a small toss to distribute the sweetener and any liquid that has pooled at the bottom. Add the crumble topping over top of the apples. Return to the oven to bake for another 30 minutes at 350°F.
  • Bake, then serve with your favorite ice cream. Allow to cool for at least 10 minutes before serving, as it will be really hot. Save in the fridge in an airtight container for up to 5 days.
