LOW FAT VANILLA PUDDING
My mom makes a family dish called biscuits and pudding for special breakfasts. It's a very old recipe and the pudding is made with whole milk, butter and whole eggs. It's Heaven... THIS pudding is ALMOST as good, and doesn't make you feel like you need to spend half the day on the treadmill. ;-)

EASY, CREAMY LOW-FAT RICE PUDDING
The use of short-grain sticky rice (also called glutinous rice for its texture) makes this dish creamy without the need for whole milk, cream, or butter. Cook the rice in a rice cooker, and it's even easier! You can find this variety of rice in almost any Asian market, many natural foods stores, and increasingly in the international section of mainstream supermarkets.

VANILLA PUDDING (REDUCED FAT)
I like this recipe because it doesn't include any butter and still has a delicious rich taste. It is also easy since it is made on top of the stove. I modified the instructions after the first review to make them more clear. It is important to stir the pudding the whole time it is cooking.

- In a double boiler placed over medium heat, whisk together a tiny splash of the coconut milk, the egg yolks, and starch, until smooth. Then, whisk in the rest of the coconut milk. Whisk occasionally for the first 5-7 minutes or so. Once it heats up, whisk constantly until thickened and pudding-like (total, it takes me ~12-13 minutes). DO NOT overcook! When I took my mixture off the stove, I stuck a thermometer in it and its temperature was 140 degrees Fahrenheit.
- Strain the mixture through a fine mesh sieve into a heat-proof bowl and let cool to room temperature. Cover and refrigerate overnight. Serve and enjoy!
