Turkish Meatballs (Kofta) image

2 slices slightly stale whole wheat bread
1 pound lean ground lamb
1 egg
2 tablespoons chopped fresh parsley
2 cloves garlic
1 teaspoon ground cumin
1 teaspoon dried mint
½ teaspoon ground allspice
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon olive oil

Steps:

  • Tear up bread slices into the bowl of a food processor; process into fine crumbs. Add ground lamb and egg; process until blended. Add parsley, garlic, cumin, mint, allspice, salt, and pepper; process until evenly combined.
  • Roll lamb mixture into small meatballs.
  • Heat olive oil in a large skillet over medium heat. Cook meatballs in batches, turning occasionally, until browned on all sides, 4 to 5 minutes per batch. Transfer to a paper towel-lined plate using a slotted spoon.

An adaptation from my boyfriend's Greek grandmother's recipe. So simple, even I (a non-cooker) can make them and they still taste great!

1/2 lb all white meat lean ground turkey
1/2 yellow onion (finely chopped)
1/4 cup parsley (finely chopped)
2 garlic cloves
1/2 teaspoon oregano
1 egg
1/2 cup dried Italian seasoned breadcrumbs
1/2 teaspoon salt
1/2 teaspoon pepper
olive oil (for browning meatballs, not in mixture)

Steps:

  • Beat egg in large bowl.
  • Add all remaining ingredients.
  • Mush together well using your hands.
  • Form into 1/2 inch balls.
  • Heat small amount of olive oil (about 1 tsp to keep this recipe low-fat) in skillet.
  • Put half the balls into the skillet and cook until browned evenly on outside.
  • Remove and add remaining balls.

olive oil flavored cooking spray
1 lb lean ground turkey
1/3 cup fat-free low-sodium chicken broth
1/4 cup plain breadcrumbs
1/4 cup onion, finely chopped
1/2 medium celery rib
1/4 cup chopped fresh flat leaf parsley
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground turmeric
1/4 teaspoon fresh ground pepper
1 small onion, thinly sliced
2 medium garlic cloves, minced
1 cup no-salt-added tomato sauce
1/3 cup dry red wine
1/4 teaspoon crushed red pepper flakes

Steps:

  • Preheat over to 400 degrees F. Lightly spray a baking rack with olive oil spray and place over a large baking sheet, leaving space between the baking rack and the baking sheet so fat can drain off.
  • In a large bowl, stir together the turkey, broth, bread crumbs, 1/4 cup onion, celery, parsley, cinnamon, allspice, turmeric, and pepper until just mixed. Shape into 16 balls and place on rack.
  • Bake for 12-15 minutes or until light golden, turning meatballs halfway through cooking time, to brown all sides. Remove from oven and place meatballs on a large plate lined in paper towels.
  • Spray a large non-stick skillet with olive oil spray. Heat pan over medium- high heat. Cook sliced onion and garlic for 3-4 minutes until soft.
  • Stir in remaining ingredients increase heat to medium-high and bring to a boil. Gently add the meatballs, spooning sauce over the meatballs. Reduce heat and simmer, covered, for 10-12 minutes or until meatballs are cooked through, turning meatballs halfway through cooking and spooning sauce over meatballs after turning.
  • Remove from heat and serve over couscous or brown rice.
