3 apples (peeled and shredded)
3 -4 tablespoons brown sugar
2 large eggs
5 -6 tablespoons flour (white or whole)
1 tablespoon cinnamon
cooking spray

Steps:

  • Mix all ingredients.
  • Spray a baking pan.
  • Using two tablespoons, form latkes in the pan.
  • Bake in 350°F.
  • Turn Latkes over till both sides golden-brown.
  • Nutrional Values per 1 serving: 59 Calories, 11 grams Carbohydrates, 1.5 grams Protein, 1 grams Fat, 36 Milligrams Cholesterol, 15.25% Fat!

This recipe is on http://www.thekosherchannel.com where you can find out lots of interesting things about Hanukkah. Getting the consistency right is important. Shred, then lightly chop, the potato and onion. A food processor works best. Brushing a bit of oil in the muffin tin cups helps them brown nicely. And be sure the oven is preheated to 425 degrees before baking. Happy Hanukkah!

2 lbs potatoes, shredded
1 onion, shredded
2 eggs or 1 egg and 2 egg white
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup matzo meal or 1/4 cup flour
1/4 teaspoon baking powder
1 tablespoon fresh dill (optional) or 1 teaspoon dried dill (optional)
1 tablespoon vegetable oil

Steps:

  • Preheat oven to 425 degrees.
  • Drain potato to remove most liquid but do not squeeze. Place shredded potato and onion in the work bowl of a food processor. Add remaining ingredients.
  • Pulse just until ingredients are mixed well and the potatoes are grated, not pureed.
  • Spray muffin tins with cooking spray. Then, using a pastry brush, brush each cup with vegetable oil. This helps to make crispy latkes. Fill each cup 1/3 full for large muffin tin and 3/4 full for small cups.
  • Bake on a middle rack 30-45 minutes (depending on the muffin tin size) until puffed and golden brown. Remove from oven and turn latkes onto a baking pan and serve immediately.
  • You may hold latkes until serving time or freeze them for later use. If I do this, I under cook them just a bit till golden, but not browned. Then I return them in the baking pan to a preheated 425 degree oven and bake 10 minutes until crisp.

Well... this one is a MUST! An amazing cake. Very good either hot or cold. Great for Breakfast, snack or entertaining. It's a healthy allover cake, it's interesting & it's mmmmm.. so tasty. This cake usually disappears so fast -- make sure to double the ingredients and store in a safe place. (This cake can be stored in the freezer.)

1 large egg
3/4 cup brown sugar (unpacked)
1 1/2 cups natural orange juice
1/4 cup canola oil
1 1/2 cups whole wheat flour
1 pinch kosher salt
1 teaspoon baking powder (full tsp)
1 tablespoon vanilla sugar
1/2 teaspoon ginger powder
1/2 teaspoon cardamom powder
1/4 teaspoon powdered clove
1/4 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon (or more)
4 tablespoons lemon peel (fresh grated)

Steps:

  • Preheat oven to 360°F.
  • Spray two 12x6 Baking Pans.
  • In a bowl, mix with a hand mixer egg + oil + orange juice.
  • In a separate bowl, mix flour + sugar + vanilla sugar + baking powder + spices + lemon peel.
  • Gradually, add liquid mixture to dry ingredients.
  • Mix well to a homogenous mixture.
  • Pour evenly to baking pans.
  • Bake 30-40 until light brown and bouncy to touch.
  • Enjoy!
  • *** Upgrades and other options:.
  • >> Take about 2 Tbs from sugar and mix with cinnamon. Slice some apples (with peel) and arrange on bottom of baking pan. Sprinkle sugar and cinnamon mixture and than pour cake mixture. When cake is ready turn upside down to a serving tray. The top is lovely, crunchy and surprising!
  • >> Oil can be substitute with 80 grams butter - if this is the taste you're going for --
  • >> Soak 50 grams raisins in some brandy for 1/2 hour, and add to cake mixture.
