ANGEL FOOD TRIFLE
A low-fat, low-sugar trifle that the whole family will love! I find that the pudding is usually set by the time I am done adding the other layers so it can be eaten right away. If not, chill in the fridge until the pudding is set. Keep refrigerated (especially if it is warm.)

Steps:
- Move oven rack to lowest position (remove other racks). Heat oven to 350°F. In extra-large glass or metal bowl, beat cake mix, cold water and extract with electric mixer on low speed 30 seconds. Beat on medium speed 1 minute. Carefully fold in cherries. Pour into ungreased 10-inch angel food (tube) cake pan. (Do not use fluted tube cake pan or 9-inch angel food pan or batter will overflow.)
- Bake 37 to 47 minutes or until top is dark golden brown and cracks feel very dry and not sticky. Do not underbake. Immediately turn pan upside down onto glass bottle, or rest edges on 2 to 4 cans of equal height until cake is completely cooled, about 2 hours. Run knife around edge of cake; remove from pan.
- In medium bowl, mix butter, powdered sugar and enough cherry juice for desired spreading consistency. Spread glaze over top of cake, allowing some to drizzle down side. Garnish with whole cherries, if desired.

Steps:
- Place the strawberries and sugar in a saucepan. Heat gently until the strawberries are soft and the sugar has dissolved. Allow the juices to reduce slightly, until they have the consistency of a thin syrup. Let cool.
- Tear fist-sized pieces from the angel-food cake and use them to line the bottom of a large, clear bowl or trifle dish. Cover with a layer of Greek yogurt and a layer of strawberries in syrup, filling in any holes in the previous layer. Add another layer of cake and continue building until all the ingredients have been used, ending with a few spoonfuls of yogurt and strawberries as a garnish.

- Sift the sugar twice. Sift the flour, salt and 1/2 cup of sugar together 3 times. (This will ensure that the flour and sugar have absolutely no lumps and that they are all well mixed together.)
- Whip the egg whites and water until foamy. Add the cream of tartar to the egg whites and continue to whip until they are stiff, but not dry. Whip in 1 tablespoon of the remaining sugar at a time. Fold in the vanilla and almond extract. Sift 1/4 cup of the flour and sugar mixture over the batter. Fold it in gently and briefly with a rubber spatula. Continue until all the flour mixture is used.
- Pour the batter into an ungreased tube pan. Bake about 45 minutes in the preheated 350°F oven. Invert the pan and rest it on an inverted funnel or some other object that allows it to remain upside down. Let the cake hang for 90 minutes before removing it from the pan.
