This tasty side dish has wonderful from-scratch flavor since it starts with fresh potatoes. It's very popular with guests at my bed-and-breakfast.-Mark Clark, Twin Mountain, New Hampshire

Number Of Ingredients 9

4 cups refrigerated or frozen hash brown potatoes, thawed
12 bacon strips, cooked and crumbled
1/2 cup 2% milk
1/3 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1 tablespoon butter, melted
1/2 teaspoon paprika

Steps:

  • In a bowl, combine the first 7 ingredients. Transfer to a greased 9-in. pie plate. Drizzle with butter; sprinkle with paprika. Bake at 350° until lightly browned, 35-45 minutes.

3 (4 ounce) cartons egg substitute or 6 large eggs, well beaten
1 (12 fluid ounce) can fat-free evaporated milk
1 teaspoon salt (optional)
1/2 teaspoon ground black pepper
1 (30 ounce) package frozen hash brown potatoes
2 cups shredded low-fat cheddar cheese
1 medium onion, chopped
1 small green bell pepper, chopped
10 slices turkey bacon, cooked and chopped or 1 cup diced ham

Steps:

  • Preheat oven to 350°F Grease 13 x 9-inch baking dish.
  • Combine eggs, evaporated milk, salt and black pepper in large bowl. Add potatoes, cheese, onion, bell pepper and ham; mix well. Pour mixture into prepared baking dish.
  • Bake for 60 to 65 minutes or until set.
  • * May substitute Evaporated Milk for Evaporated Fat Free Milk.

Inspired by a magazine, TRUE! Then took a little bit different twist too! GREAT for a weekend when want to indulge, LOW fat and tasty without giving your body the bulge :)

900 g potatoes
1 tablespoon stock
1 red onion
100 g low-fat bacon
1 cup low-fat cheese
1 egg
2 tablespoons parsley
1/2 cup breadcrumbs
cooking spray
pepper

Steps:

  • Peel potatoes and cut in half; place in large saucepan and cook uncovered for 15 - 20 minutes until soft; mash.
  • Fine dice onion and bacon; Spray frypan with cooking oil and sauté both for 5 minutes.
  • NOTE: I used Weight Watchers bacon.
  • Add above mixture, egg (slightly beaten), cheese and parsley to potato mash; season with pepper.
  • Using 1/2 cup of potato mixture, roll slightly in breadcrumbs; place on a plate and refrigerate for at least 30 minutes.
  • Spray frypan with cooking oil and cook patties 5 minutes of until golden brown on both sides.
  • ENJOY!
  • NOTE: I served them with rocket, feta and tomato with scrambled eggs on top with apple cinnamon fruit slice and fat-free strawberry jam.

  • After the 7 minutes, flip the hash browns in sections with a spatula and cook the other side for another 5-7 minutes, checking for doneness after the first 5 minutes and possibly reducing heat, if necessary.
