AIR-FRIED ONION RINGS

Air-Fried Onion Rings image

Onion rings battered, breaded, and then fried to crispy perfection. What's best: because they are air fried, they are better for you than their deep-fried counterparts!

Provided by Chef Wheeler del Torro

Categories     Appetizers and Snacks

Time 22m

Yield 4

Number Of Ingredients 11

¾ cup all-purpose flour
½ cup cornstarch
2 teaspoons baking powder
1 teaspoon salt
1 large onion, cut into rings
1 cup milk
1 egg
1 cup bread crumbs
cooking spray
2 pinches garlic powder
2 pinches paprika

Steps:

  • Stir flour, cornstarch, baking powder, and salt together in a small bowl. Dip onion rings into the flour mixture until coated; set aside.
  • Whisk milk and egg into the flour mixture using a fork. Dip the floured rings into the batter to coat. Place on a wire rack to drain until the batter stops dripping.
  • Place bread crumbs in a shallow dish. Place rings one at a time into the crumbs and scoop the crumbs over the rings to coat evenly. Give rings a hard tap as you remove them from the crumbs; the coating should cling very well. Repeat with remaining rings.
  • Heat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions. Place rings side by side in the frying basket. Spray lightly with cooking spray. Flip rings and place basket in the air fryer. Cook until rings are golden brown, 2 to 3 minutes. Flip once halfway through. Drain on paper towels and sprinkle with garlic powder and paprika.

OVEN-BAKED ONION RINGS

Oven-Baked Onion Rings image

Provided by Dreena Burton

Number Of Ingredients 7

1 large or 2 medium onions
1/3 cup chickpea flour
couple pinches sea salt
1/2 - 3/4 cup aquafaba (chickpea brine; the liquid from a can of chickpeas)
1 - 1 1/2 cups fine bread crumbs (of choice, I like panko)
1/2 tsp sea salt
1/2 tsp smoked paprika (or regular paprika, but smoked much tastier)

Steps:

  • First, slice and soak the onions. Slice in rings, and place in a bowl covered with ice-cold water. Prepare 2 baking sheets with parchment paper and preheat oven to 450 degrees. Let soak for 1/2 hour. Drain and pat dry with paper towels. Place the chickpea flour with the sea salt in a ziploc bag. Put the chickpea brine in a bowl. Finally, combine the breadcrumbs, sea salt, and paprika in a third bowl. Once mixing through, transfer roughly half of this mixture to another bowl. (The onion rings will be coated in three steps - first in the chickpea flour, then the chickpea brine, and finally the breadcrumbs. Separating the breadcrumbs into two batches will help keep them dry so they will adhere to the onion rings. So, work with one bowl of breadcrumbs and then about halfway through the coating process, move on to that second bowl of breadcrumbs.)
  • Place the soaked/dry onions in the ziploc bag, seal, and shake to coat the rings. Remove, and dip each ring in the chickpea brine (discard any remaining), and next into the breadcrumb mixture. Place rings on the baking sheets. Bake for 15 minutes. After that time, rotate the trays (from bottom to top), flip the rings, and bake another 10-15 minutes until golden and crispy! Serve.

  • Note the “layers” that comprise each Onion portion (like the pattern in a tree trunk). We will be using two Onion “Layers” for each Onion Ring. Using your fingers, carefully press the center portion of each Onion away from two of the Onion Layers, to form a hollow Ring. Repeat with each portion of the Onion until no more circles remain, and then continue with the rest of the Onion portions.

  • Use a fork to steady the onion. Slice into 1 cm rings. Remove the skin and separate the rings. Discard the ends and the small rings right in the centre.
  • Heat the oil in a 18 x 9 cm saucepan until really hot and slightly bubbling. The oil should be deep enough to fully cover the onion rings. I used 2 cups.
  • Place all the dry ingredients in a bowl and mix. Add the wet ingredients to another clean bowl and mix to combine. Dip each onion ring in the wet and then into the dry to fully coat and place on a wire rack. Coat 8 at a time and fry in batches of 4 to avoid the whey batter soaking and disappearing into the egg.
  • Carefully lower 4 onion rings at a time into the hot oil and fry about 45 seconds or until golden and crisp. Remove the onion rings with a slotted spoon and place on kitchen paper to soak up any excess fat.
