CRISPY BAKED ONION RINGS
These baked onion rings are incredible! There is no way that you feel like you are eating healthy and low fat when you eat these.

- Preheat the oven to 450 degrees F. Place baking paper onto 2 baking sheets and set aside.
- In a small bowl, combine the flour, smoked paprika, paprika, 1 teaspoon of salt, pepper and garlic powder.
- In another bowl or shallow dish, whisk together the buttermilk and eggs. Add half of the flour mixture to the buttermilk and beat until smooth and thickened.
- In a separate bowl, combine the breadcrumbs, and remaining teaspoon of salt.
- Lightly dredge the onion rings in the flour mixture and then drop into the buttermilk. Drain the excess batter and then dredge in the breadcrumbs. For a thicker coating, chill the coated onion rings for one hour and then repeat this step (as I did).
- Arrange on the prepared baking sheets in a single layer. You can place smaller rings inside bigger ones if necessary, just make sure there is space between them.
- Spray generously with the cooking spray.
- Bake 20 to 30 minutes. Halfway through the cooking time, flip over each onion ring over and spray with cooking spray to ensure even crisping and browning.

SIMPLY THE BEST BAKED ONION RINGS!
These baked onion rings are incredible! There is no way that you feel like you are eating healthy and low fat when you eat these. This is a slight adaptation of a Yahoo Health recipe. I dip mine in ketchup but my husband is a purist who prefers his plain. And while the prep time can be a little long, make it a social time. I talk to everyone in the house while I make these, and then sit back and enjoy how great they smell as they cook!

Steps:
- Preheat the oven to 400 degrees.
- Spray a baking sheet with nonstick spray.
- Slice the onions width wise and then break them apart into rings.
- Put the flour in 1 bowl, the egg whites into a second, and into the third put the bread crumbs and all the spices (all the rest of the ingredients).
- Dip each onion ring into the flour, then the egg whites, and then the bread crumbs.
- Place them on the baking sheet and then repeat with the next ring.
- Bake them all for about 20 minutes or until crispy.
LOW CARB DEEP-FRIED ONION RINGS
Steps:
- Place a heavy pot over medium-high heat with at least an inch of vegetable oil. Heat oil to 350 degrees F; it is important to monitor and maintain the temperature, or the soy flour breading and your oil will burn. (Portable deep fryers at home are great for this.)
- In a medium bowl, mix the eggs and cream to make an egg wash. In a separate larger bowl, mix the breading ingredients together.
- Peel and slice the onions in thick slices and carefully separate the rings. Then dip individual onion rings in the breading, then the egg wash, and then back in the breading again, making sure to coat well. Pat off any excess breading and carefully place into hot oil, in batches as necessary, and fry until golden brown and crisp, just 1 to 2 minutes. Remove and drain on paper towels. Serve immediately

- Place slices of onion in a shallow dish.
- Pour the buttermilk over the top and let them soak for about 1 - 2 hours, refrigerated.
- Preheat oven to 450 degrees.
- Line baking sheet with parchment paper or foil.
- Combine panko, bread crumbs and corn flakes and place half of the crumbs in a large dish, season with salt. Reserve the rest for when the first batch is used up.
- This should help avoid clumping and they should stick better to the onions.
- Dip each soaked onion ring into the crumb mixture; coat well.
- Place rings onto two cookie sheets.
- Lightly spray with oil.
- Bake about 12 minutes or until golden brown.
- Serve immediately.

OVEN-BAKED ONION RINGS

- First, slice and soak the onions. Slice in rings, and place in a bowl covered with ice-cold water. Prepare 2 baking sheets with parchment paper and preheat oven to 450 degrees. Let soak for 1/2 hour. Drain and pat dry with paper towels. Place the chickpea flour with the sea salt in a ziploc bag. Put the chickpea brine in a bowl. Finally, combine the breadcrumbs, sea salt, and paprika in a third bowl. Once mixing through, transfer roughly half of this mixture to another bowl. (The onion rings will be coated in three steps - first in the chickpea flour, then the chickpea brine, and finally the breadcrumbs. Separating the breadcrumbs into two batches will help keep them dry so they will adhere to the onion rings. So, work with one bowl of breadcrumbs and then about halfway through the coating process, move on to that second bowl of breadcrumbs.)
- Place the soaked/dry onions in the ziploc bag, seal, and shake to coat the rings. Remove, and dip each ring in the chickpea brine (discard any remaining), and next into the breadcrumb mixture. Place rings on the baking sheets. Bake for 15 minutes. After that time, rotate the trays (from bottom to top), flip the rings, and bake another 10-15 minutes until golden and crispy! Serve.
