Steps:
- Combine broth and mustard in a measuring cup. Pour contents of the measuring cup into a heated skillet; boil until liquid is reduced by about half. Tilt skillet so that the liquid is at one side of the pan, then whisk in cream until sauce is smooth. Spoon sauce over cooked steaks and serve immediately.

Steps:
- Beat egg yolks with dry mustard in the top of a double boiler until blended.
- Add vinegar gradually, beating after each addition.
- Cook over simmering water, stirring constantly until thick and smooth.
- Add milk gradually, beating in with a fork or wire whip.
- Cook 5 more minutes over simmering water.
- Remove from heat.
- Let cool 10 minutes.
- Add remaining ingredients, blend well.

- heat a sauce pan on a medium low heat. Once heated, pour in the white wine and let boil to 1/2 the volume you place in the pan (1-2 minutes). Whisk in the sour cream, mustard, milk, and taragon, stiring constantly for 3 minutes. Lower the heat and continue to intermitently stir till thickened. You may have to add up to a teaspoon of Wondra sauce flour depending on how thick you lick your sauce.
