We used a baker's secret to make this delicious cobbler perfect: Heat the filling before topping it off with the dough.

2 cup(s) Fresh blackberries
2 cup(s) Strawberries hulled and halved
0.5 tsp(s) Table salt divided
2 tbsp(s) Cornstarch
0.25 cup(s) Sugar
0.667 cup(s) All-purpose flour
1 tsp(s) Sugar
0.5 tsp(s) Baking powder
0.25 tsp(s) Baking soda
0.125 tsp(s) Ground cardamom
0.5 cup(s) Low-fat buttermilk

Steps:

  • Preheat oven to 400ºF. In a shallow, 2-quart ovenproof dish, stir together berries, 1/4 teaspoon salt, cornstarch and 1/4 cup sugar. Bake until hot, about 5 minutes.
  • Meanwhile, prepare topping: In a bowl, stir together flour, 1 teaspoon sugar, baking powder, baking soda, 1/4 teaspoon salt and cardamom. Stir in buttermilk to form a sticky dough.
  • Remove fruit from oven. Drop dough by heaping tablespoons onto fruit to form 4 biscuits. Bake until biscuits are golden and fruit is bubbling, about 25 minutes. Allow cobbler to sit for 5 minutes for fruit to firm up before serving. Yields about 1 cup fruit and 1 biscuit per serving.

1/2 cup sugar
4-1/2 teaspoons quick-cooking tapioca
1/4 teaspoon ground allspice
5 cups fresh or frozen blackberries, thawed
2 tablespoons orange juice
DOUGH:
1 cup all-purpose flour
1/3 cup plus 1 tablespoon sugar, divided
1/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup vanilla yogurt
1/3 cup fat-free milk
3 tablespoons butter, melted

Steps:

  • Preheat oven to 350°. In a large bowl, combine sugar, tapioca and allspice. Add blackberries and orange juice; toss to coat. Let stand for 15 minutes. Spoon into a greased 2-qt. baking dish., In a large bowl, combine flour, 1/3 cup sugar, baking soda and salt. Combine yogurt, milk and butter; stir into dry ingredients until smooth. Spread over the berry mixture. , Bake for 20 minutes; sprinkle with remaining sugar. Bake until golden brown, 25-30 minutes. Serve warm.

Steps:

Steps:

  • Preheat oven to 350˚F.
  • Place berries in a medium bowl. In another medium bowl, combine flour and sugar. Remove 3 tablespoons of flour mixture and gently toss with berries. Place berries in an 8-inch square pan.
  • To make topping, add melted butter to remaining flour mixture; combine well. Crumble little bits of topping all over top of berries. Bake until berries just start to bubble, about 35 to 40 minutes. Cut into 8 pieces; serve warm or at room temperature. Yields 1 piece per serving.
