This is a great pie for summer and only takes minutes to make.

¼ cup orange-flavored drink mix (e.g. Tang)
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) package cream cheese, softened
1 (9 inch) prepared graham cracker crust
1 cup frozen whipped topping, thawed
8 mandarin orange segments

Steps:

  • In a large bowl combine the orange drink mix, condensed milk, and cream cheese. Beat on high speed with an electric mixer until well combined.
  • Pour mixture into the graham cracker crust and chill for 1 hour or until firm. Garnish with whipped topping and mandarin orange segments.

You can make this the day before serving but don't whip the topping whip cream until shortly before serving. You can also eliminate the whip cream topping and garnish with mandarin orange slices (for a lower fat version).

1 1/4 cups graham wafer crumbs
1 tablespoon sugar
1/4 cup melted butter
1 envelope unflavored gelatin
2 tablespoons cold water
1 cup boiling water
1 cup sugar
1/2 cup fresh lemon juice
2 cups whipping cream
1 (10 ounce) can mandarin oranges, drained

Steps:

  • Mix graham wafer crumbs, sugar and melted butter together.
  • Spread in the bottom and up the sides of a 9 inch pie plate.
  • Refrigerate.
  • Mix gelatine with cold water.
  • Stir in boiling water.
  • Add sugar and stir to dissolve.
  • Stir in lemon juice.
  • Refrigerate until it starts to thicken.
  • Whip cream until thick.
  • Fold half of the whipped cream into the gelatine mixture, until blended.
  • Fold in the mandarin oranges.
  • Spoon into the crumb crust.
  • Top with the remaining whipped cream.
  • Refrigerate 3- 4 hours.

4 chicken breast halves, boneless, skinless
12 cups romaine lettuce, torn into pieces and loosely packed
1 (10 ounce) bag shredded carrots
2 tablespoons sesame seeds, toasted and salted
1 1/2 cups canned mandarin oranges, packed in juice and drained
1 cup red cabbage, shredded
1 cup crisp chow mein noodles
1/4 light mayonnaise
2 1/2 tablespoons rice vinegar
1 tablespoon Splenda sugar substitute
2 1/2 teaspoons sesame oil
2 1/2 teaspoons soy sauce
1/4 teaspoon garlic powder

Steps:

  • Place chicken breasts in pot of boiling water; reduce heat, cover pot and simmer 20 to 25 minutes, or until chicken is tender and no longer pink. Once it's thoroughly cooked, remove chicken from pot, cool meat and then dice into bite-sized pieces.
  • Combine all dressing ingredients in medium bowl and mix well with electric mixer until blended. Chill dressing before serving.
  • While dressing chills, combine all salad ingredients in large bowl. Toss dressing into salad or serve dressing on side.

4 egg whites
1/2 cup unsweetened applesauce
1 (11 ounce) can mandarin oranges in juice
1 (3 1/2 ounce) box instant vanilla pudding
1 (20 ounce) can crushed pineapple with juice
1 (12 ounce) container Cool Whip

Steps:

  • Mix cake mix, eggs, applesauce and oranges.
  • Beat on high about 6 minutes.
  • Put in a 9 x 13 pan, very well greased and floured.
  • Bake 15 minutes at 325 degrees, or until cake is done.
  • Let cool.
  • Mix pudding and pineapple with juice, fold in a large tub of cool whip.
  • Top cake with this.
  • NOTES: Refrigerate.
