LOW FAT HORSERADISH MASH POTATOES

Low Fat Horseradish Mash Potatoes image

Okay, this is a simple one, but these potatoes go so well with pork dishes, I thought that I would throw it out there. It's just five ingredients, but understand that since we're not using any butter... these babies are low fat. So, you ready... Let's get into the kitchen.

Provided by Andy Anderson !

Categories     Potatoes

Time 40m

Number Of Ingredients 5

1 1/2 lb potatoes, golden variety
1/2 c low fat milk, or buttermilk
1 Tbsp fresh horseradish
black pepper, freshly ground, to taste
kosher salt, to taste

Steps:

  • 1. Start with 1.5 pounds of golden potatoes.
  • 2. Boil the potatoes with the skins on until tender, about 30 to 40 minutes
  • 3. Chef's Tip: When you can insert a pairing knife into the potato without resistance, they are ready.
  • 4. Chef's Tip: One of the items in my test kitchen that I use quite a lot is a good potato ricer. It rices the potatoes, and removes the skins, at the same time.
  • 5. Mash together with the remainder of the ingredients, and serve warm.
  • 6. Chef's Note: These go really well with pork dishes.
  • 7. Keep the faith, and keep cooking.

  • Cauliflower ... Cook the cauliflower in a large pot of salted boiling water until tender. Drain and remove to a medium size bowl.
  • Puree ... I prefer to use a food processor to puree the cauliflower, but you can also use a potato masher, if you want a chunkier texture. In the food processor, pulse several times until the cauliflower is pureed smooth. Then, add in the cream cheese, horseradish, salt, pepper and a little broth and pulse a few times to combine everything. If you want the cauliflower a bit creamier, add in the rest of the broth. Taste for any additional seasoning.
