I started with a recipes from Fat Free Baking & changed it a little. It is good for a breakfast bread, but you need to be careful that it doesn't get dried out.

2 cups whole wheat flour
1/4 cup brown sugar
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon pumpkin pie spice
1 cup mashed very ripe banana
1/3 cup honey
1/4 cup low-fat milk or 1/4 cup skim milk

Steps:

  • combine the flour, brown sugar, baking powder, baking soda& pie spice, mix well.
  • Add banana, honey& milk.
  • Stir just until the dry ingredients are moistened.
  • Coat an 8x4 inch loaf pan (double recipe if using a larger pan to avoid a drying out the bread).
  • with nonstick cooking spray.
  • Spread the mixture evenly in the pan.
  • Bake@ 325ºF for 45 to 50 minutes, or just until a toothpick inserted in the center of the loaf comes out clean.
  • Remove the bread from the oven& let sit for 10 minutes.
  • Invert the loaf onto a wire rack, right side up,& cool before slicing& serving.

1 ½ cups all-purpose flour
¾ cup white sugar
1 ¼ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
2 egg whites
1 cup banana, mashed
¼ cup applesauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
  • In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan.
  • Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.

⅔ cup white sugar
¼ cup margarine, softened
2 eggs
1 cup mashed bananas
¼ cup water
1 ⅔ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray one 9x5x3 inch loaf pan with a non-stick cooking spray.
  • In a medium bowl, beat the white sugar and margarine or butter until smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until it is well blended.
  • Mix in the flour, baking soda, salt and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients.
  • Bake at 350 degrees F (175 degree C) for about 60 minutes. Bread is done when the top is firm to the touch and a golden brown color. Time will vary according to loaf size and oven type. When bread is removed from oven, allow it to cool on it's side for 10 minutes, then remove from pan and let cool on a rack. This bread is also excellent if you add mini chocolate chips or small fruit pieces to the mix just before baking.

Steps:

  • Preheat oven to 180 c/ gas mark 4 and line a loaf tin of baking paper
  • In a medium bowl beat sugar and butter till smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until well blended
  • Mix in the flour, bicarbonate of soda and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients
  • Bake till the top is firm to the touch and golden brown in colour. When bread is removed from the oven, allow to cool on its side for 10 minutes, then remove from tin and let cool on wire rack
  • Enjoy!!

I got this recipe from a friend, who got it at a Weight Watchers meeting. It's so delicious you won't believe you're eating low fat! It doubles perfectly (I never make just one loaf!) and if you don't have enough banana, just use applesauce for the balance. It works like a charm. Enjoy!!! 2 points per 1/16 of a loaf.

  • Preheat oven to 325°F.

2 eggs
½ cup 2% plain greek yogurt
⅓ cup honey
1 teaspoon vanilla extract
1 teaspoon baking soda
1 ½ cups wheat flour
1 cup blueberry

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a medium bowl, mash bananas. Mix eggs, yogurt, honey, vanilla extract, and baking soda into mixture.
  • Add flour and mix.
  • Add blueberries and gently fold into mixture.
  • Pour the batter into a greased 9 x 5-inch (23 x 13 cm) bread pan. Bake for about 50 mins, or until a toothpick comes out clean from the middle of the bread. (Baking times may vary, so keep an eye on the bread.)
  • Allow to cool for 15 minutes before serving.

Steps:

  • Preheat the oven to 170C/fan 150C/gas 5 and grease a small loaf tin.
  • Combine the flour, bicarbonate of soda and salt.
  • Cream together the butter and brown sugar until pale. Beat in the eggs one at a time, then the bananas, saltanas and the honey.
  • Stir banana mixture into the flour mixture, combining until moist.
  • Bake for one hour or until a cake tester comes out of the cake clean. Leave to stand in the tin for at least 10 minutes before turning out on to a cooling rack and allowing to stand until cool.
