2 tablespoons vegetable oil
1 cup sliced mushrooms
1 small onion, diced
8 ounces smoked lean ham
10 ounces frozen peas
1/2 teaspoon salt
1 medium garlic clove, minced
1 lb bow tie pasta
1 cup sour cream
1/2 teaspoon pepper
4 ounces monterey jack cheese

Steps:

  • Cook pasta according to directions.
  • Cook peas according to directions.
  • Heat oil, add onion and saute.
  • add mushrooms and saute.
  • add garlic and saute.
  • add ham and cook until heated.
  • Remove pan from heat.
  • Stir in sour cream, peas, salt and pepper.
  • Toss ham mixture, hot pasta and cheese in a large serving.

7 1/2 ounces dried bow tie pasta
2 (8 ounce) containers light sour cream
1 (12 ounce) container fat-free cottage cheese
1 tablespoon flour
3/4 cup 2% low-fat milk
2 eggs or 1/2 cup egg substitute
2 cups cubed lean ham
1/2 cup red bell pepper, chopped
1/2 cup finely chopped celery
1 tablespoon minced onion

Steps:

  • Cook pasta in boiling water as directed on package. Drain. Meanwhile, heat oven to 325 degrees. Spray a 13x9 casserole dish with nonstick cooking spray.
  • In blender container, combine sour cream, cottage cheese, flour, milk, and eggs; blend well. In a large bowl, mix ham, bell pepper, celery and onion. Add the sour cream mixture and pasta to bowl and mix well. Pour into sprayed casserole. Spray a sheet of foil with cooking spray and cover baking dish.
  • Bake 50-60 minutes or until thoroughly heated. Stir before serving.
