Here's what you need: shredded chicken, corn, shredded cheese, enchilada sauce, tortillas

1 cup shredded chicken
¼ cup corn
½ cup shredded cheese
1 can enchilada sauce, 19 ounces (535 grams)
5 tortillas

Steps:

  • Heat the oven to 350°F (180°C).
  • Combine the chicken, corn, enchilada sauce (leave ¼ cup for topping and base), and ¼ cup (25 G) cheese in a bowl
  • Pour thin layer of enchilada sauce into a pan.
  • Pour thin layer of enchilada sauce onto a plate.
  • Dip a tortilla in the plate with enchilada sauce until soaked. Fill with chicken mixture and roll. Place in the pan.
  • Top completed enchiladas with the remaining enchilada sauce and cheese.
  • Bake for 15 minutes, or until cheese has melted.
  • Enjoy!

Steps:

  • Preheat oven to 350 degrees F.
  • Shred poached chicken and set aside.
  • Heat rest of ingredients (except cheese and tortillas) in a saucepan and set aside.
  • Spray a 9x13-inch pan with Pam.
  • Heat corn tortilla.
  • Place chicken and sauce down the middle.
  • Roll and place in pan.
  • Pour remaining sauce over top of enchiladas and top with cheese.

Fill flour tortillas with lean turkey mince in a rich tomato sauce, then top with cheese and bake for a family friendly Mexican dinner

1 tbsp sunflower oil
500g turkey mince (2% fat)
1 medium onion, finely chopped
1 yellow pepper, deseeded and thinly sliced
400g can chopped tomatoes
400g can red kidney beans in chilli sauce
1 tbsp fresh lime or lemon juice
2 heaped tbsp roughly chopped coriander, plus extra to garnish
6 regular or 8 mini flour tortillas
50g reduced-fat mature cheddar, coarsely grated
large mixed salad, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat most of the oil in a large non-stick frying pan. Fry the turkey, onion and pepper for 5 mins, stirring regularly and breaking up the mince with a wooden spoon. Add the chopped tomatoes and kidney beans.
  • Bring to a gentle simmer and cook for 10 mins, stirring regularly. Remove from the heat and stir in the lime juice and coriander. Season well.
  • Lightly grease a shallow ovenproof dish with the remaining oil. Put 1 tortilla in the dish and top with a couple of generous spoonfuls of the turkey mixture. Roll up and push to one side of the dish. Repeat with the other tortillas, then spoon any remaining turkey mixture down the sides of the dish.
  • Sprinkle the tortillas with the cheese and bake for 15 mins. Scatter coriander over the enchiladas and serve with a salad.

½ teaspoon chili powder (optional)
2 cups shredded Monterey Jack cheese (divided)
8 flour tortillas
3 Tablespoons butter
3 Tablespoons flour
2 cups chicken broth
1 cup sour cream
4 ounces diced green chilis (1 can, drained)
1 teaspoon dried cilantro
½ teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon pepper

Steps:

  • Preheat oven to 350 degrees. Grease a 9x13 pan using non-stick cooking spray.
  • Mix cooked turkey, chili powder (optional) and 1 cup of Monterey Jack cheese together. Roll up in tortillas and place in pan.
  • In a medium saucepan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
  • Stir in sour cream, can of chilies, cilantro, onion powder, garlic powder, and pepper.
  • **Be sure that you don't bring this to a boil- you don't want to have curdled sour cream!
  • Pour over enchiladas and top with remaining cheese.
  • Bake 20-22 minutes and then place under high broil for 3 min to brown the cheese.

1 large red onion, peeled
3 large skinless, boneless chicken breasts
1 head garlic, peeled
1 (16 ounce) container low-fat cottage cheese
½ cup shredded low-fat Cheddar cheese
4 cloves garlic, minced
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 teaspoon ground cumin
⅛ teaspoon cayenne pepper
1 (28 ounce) can red enchilada sauce
8 flour tortillas

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Dice 1/2 of the red onion; leave remaining 1/2 whole.
  • Bring chicken, garlic head, and whole 1/2 of red onion to a boil in a large pot of water. Cook until chicken is no longer pink in the center, 15 to 20 minutes. Drain and shred chicken with 2 forks.
  • Mix cottage cheese, Cheddar cheese, and 4 garlic cloves together in a large bowl. Add diced onion, shredded chicken, and spinach; stir together.
  • Add cumin and cayenne to enchilada sauce in a bowl; stir well. Spread about 1/2 cup into the bottom of a 9x13-inch baking dish. Spoon about 1/3 cup of cheese-chicken mixture into each tortilla, roll tightly, and place into the dish. Repeat until all tortillas are filled. Pour remaining sauce over enchiladas.
  • Bake, covered, in the preheated oven until bubbly, about 25 minutes.

1 cup pinto beans

1 (4 ounce) can diced green chilies
4 low-fat flour tortillas
1 (10 ounce) can enchilada sauce
1/2 cup reduced-fat monterey jack cheese, shredded

Steps:

  • Preheat oven to 350 degrees. Coat an 8-inch square baking dish with nonstick cooking spray.
  • Heat oil in a large nonstick skillet. Sauté onions until translucent.
  • Crumble in beef and cook until no longer pink.
  • Add cumin, beans, tomatoes and chiles.
  • Cook for 10 minutes until sauce is reduced.
  • Spread a little enchilada sauce on each tortilla.
  • Spoon beef mixture into each of the four tortillas.
  • Roll up and place seam down into the baking dish. Four will fit into the dish perfectly.

I read about 30 different recipes from 3 different sources and this is what I came up with - I liked it and so did my company!! This make a LOT of enchiladas - I used 2 (9x13)baking pans - sprayed with Pam. Enjoy!!

1 1/2 lbs ground turkey
2 cups shredded Mexican blend cheese
15 -16 6-inch corn tortillas
1 (10 3/4 ounce) can low-fat tomato soup
1 (10 3/4 ounce) can low-fat cream of mushroom soup
1 (16 ounce) jar salsa
1 (16 ounce) can fat-free refried beans
1 (7 ounce) can corn, drained
nonstick cooking spray, like pam

Steps:

  • Preheat oven to 350.
  • Brown meat well in a skillet, stirring to break it up.
  • Combine with the re-fried beans, corn and 1/2 of the cheese.
  • Warm the tortillas as directed (I nuke mine- no frying).
  • Put the meat mixture in the middle of each tortilla and fold in half- place seam side down in a sprayed baking pan.
  • Combine the 2 cans of soup and the jar of salsa in a large bowl and spoon evenly over the enchiladas.
  • Cover well with the remaining cheese.
  • Bake about 30 minutes, or until cheese is browned and sauce is bubbly.
