1 ¼ cups all purpose flour
1 ¼ cups whole wheat flour, You can also use all purpose flour
½ cup unsweetened cocoa powder
1 tsp each baking soda and cinnamon
1 ½ tsp baking powder
¾ tsp salt
1 cup sugar
3 whole eggs
½ cup unsweetened applesauce
1/3 cup vegetable oil
2 tsp vanilla
2 cups packed, grated zucchini
½ cup chocolate chips-mini or regular size

Steps:

  • Preheat oven to 350' Spray two 8x4 inch loaf pans with non-stick spray. Set aside.
  • In a large bowl, combine flour, cocoa, baking powder, baking soda, cinnamon, and salt. set aside
  • In a medium bowl, whisk together sugar, eggs, applesauce, vegetable oil and vanilla. Stir in Zucchini. Add wet ingredients to dry ingredients. Stir just until dry ingredients are moistened. Fold in chocolate chips. If making double recipe use a mixer)
  • Spread batter evenly in prepared pans. Bake for 50 minutes (25 minutes for smaller loaves) or until toothpick inserted in center of loaf comes out clean. Cool for 5 minutes in pans and let cool on a wire rack before serving.

2 cups flour
2 tsp baking powder
1/2 tsp salt
2 eggs
2/3 cup sugar
1/4 cup applesauce
3/4 cup buttermilk
4 Tbsp lemon juice
1 zucchini (grated (about 1 cup))
1 lemon zest of lemon
1/4 cup powdered sugar
2 tsp lemon juice
1 lemon zest of lemon

Steps:

  • Preheat oven to 350 degrees.
  • In medium bowl, mix flour, baking powder and salt; set aside.
  • Whisk eggs and sugar together; mix in applesauce, buttermilk and lemon juice then add zucchini and lemon zest; mix to just combined.
  • Add dry ingredients into batter; do not over mix.
  • Scoop 1 tablespoon of batter into each mini cupcake round and bake 15-18 minutes or until toothpick inserted comes out clean.
  • For an easy glaze, mix ¼ cup of powdered sugar, 2 tsp of lemon juice and the zest of 1 lemon. When tops are dry, dust with powdered sugar.

1 1/4 cup whole wheat pastry flour or white whole wheat flour
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons coconut oil, melted and cooled (or sub olive oil)
1/3 cup honey, agave nectar or pure maple syrup
1 teaspoon vanilla
1 egg
1 cup shredded zucchini (from about 1 medium zucchini)
1 ripe mashed banana (or you can use 1/4 cup unsweetened applesauce)
1/2 cup unsweetened vanilla almond milk
1/2 cup regular or mini chocolate chips, dairy free if desired

Steps:

  • Preheat oven to 350 degrees F. Line 12 cup muffin tin with cupcake liners and generously spray inside of liners with nonstick cooking spray.
  • Squeeze shredded zucchini of excess water with a paper towel. This is important, so don't forget!
  • In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.
  • In the bowl of an electric mixer, add coconut oil, honey/maple syrup, vanilla, egg; mix on medium-low until smooth and well combined. Add in zucchini, banana (or applesauce) and almondmilk; mix again. Slowly add in dry ingredients and mix until just combined. Gently fold in chocolate chips.
  • Evenly divide batter into prepared liners. Bake 22-25 minutes or until toothpick inserted into middle comes out clean. After 5 minutes, remove muffins and transfer to wire rack to finish cooling. Enjoy!

As a family of chocoholics, these muffins are always a huge hit at my house! They're full of rich chocolate flavor, similar to 70% dark chocolate, thanks to cocoa powder and mini chocolate chips... And the hearty oats combined with lots of Greek yogurt give them a slight fudgy texture, just like my favorite fudgy brownies! Leftovers will keep for at least one week if stored in an airtight container in the refrigerator, and they also freeze really well.

1 ½ cups (180g) oat bran
½ cup (120g) plain nonfat Greek yogurt
¾ cup (180mL) nonfat milk, divided
2 tsp vanilla extract
¾ cup (60g) unsweetened cocoa powder

2 tsp baking powder
1 ½ tsp ground cinnamon
¼ tsp ground nutmeg

Steps:

  • Preheat the oven to 350°F, and lightly coat 12 muffin cups with nonstick spray.
  • In a medium bowl, stir together the oat bran, Greek yogurt, ½ cup of milk, and vanilla extract. Let the mixture rest for at least 10 minutes while preparing the remaining ingredients.
  • In a separate bowl, whisk together the cocoa powder, flour, baking powder, cinnamon, nutmeg, allspice, and salt. In a third bowl, whisk together the coconut oil and egg whites. Stir in the molasses and maple syrup. Add the oat bran mixture, stirring until fully incorporated. Alternate between adding the flour mixture and remaining ¼ cup of milk, beginning and ending with the flour mixture, and stirring just until incorporated. (For best results, add the flour mixture in 3 equal parts.) Fold in the zucchini and 2 ½ tablespoons of miniature chocolate chips.
