LOW-FAT BANANA OATMEAL CHOCOLATE CHIP MUFFINS
I am now actually "watching" my diet, and in the process am trying to make my favorites in a "low fat" manner. I took my favorite muffin recipes and combined them, made some adjustments and came up with this great recipe. Hope you enjoy them!

Steps:
- Add sugar to mashed bananas and mix.
- Add beaten egg and mix.
- In a separate bowl mix all dry ingredients.
- Add dry ingredients to the banana mixture and mix well.
- Mix in applesauce.
- Add chocolate chips and Stir.
- Spoon into medium size muffin tin (I use paper muffin cups so they won't stick) and fill 3/4's full.
- Bake for 20-25 minutes at 350.
- Enjoy!

- Mash bananas.
- Add remaining ingredients except chocolate chips and mix.
- Add chocolate chips and stir (I start with the 1/2 c and add more if it looks like too little.).
- Pour into grased muffin tins and bake at 350 for approx 15-20 minutes (until toothpick comes out clean).

Steps:
- Combine sugar and egg and blend well.
- Add the mashed bananas, applesauce, and yogurt and stir to combine.
- Stir in chocolate chips and set aside.
- In another bowl, combine the flour, baking powder, baking soda, and salt.
- Add to the wet mixture and stir until just blended- the batter will be lumpy.
- Pour the batter into muffins tins.
- Bake at 375 for 10-15 minutes- be careful not to let them get too brown.

These muffins originally did not call for chocolate chips but I could not resist adding them, I mean, banana and chocolate is a wonderful pairing.

- Mix I - mix all ingredients using a hand blender in a large bowl.
- Mix II - combine all ingredients and combine with Mix I until just just moist and blended.
- Fill into muffin pans.
- Bake at 350 F and bake for approx 20 min, until golden on top.
