LOW-FAT PASTA PRIMAVERA

Low-Fat Pasta Primavera- The classic spring pasta dish, lightened up! Loaded with fresh veggies and a lightened cream sauce!

1/2 lb. pasta (penne or farfalle work well)
1 tablespoon extra virgin olive oil
1/2 medium yellow onion, diced
2 garlic cloves, minced
2 carrots, peeled and sliced diagonally
1 cup sliced mushrooms
1 medium yellow squash, sliced
1 medium zucchini, sliced
1/2 cup low sodium chicken broth (or vegetable broth)
1 cup fat free half and half
1/2 cup grated Parmesan cheese
1/2 cup frozen peas
salt and pepper to taste
fresh basil or parsley (for garnish)

Steps:

  • Prepare pasta according to package directions. Drain and set aside cooked pasta.
  • While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the onions and cook until translucent, about 2 minutes. Add the carrots and cook for another 4 minutes or so. Add the garlic and cook about 30 seconds until fragrant. Remove the mixture from the pan into a bowl and set aside.
  • Add the mushrooms in a single layer and saute for about 4 minutes. Remove from the pan and set aside in the bowl with the carrots.
  • Add the zucchini and squash to the pan and saute until lightly golden, 4-5 minutes. Remove from the heat and add to the other cooked vegetables.
  • Add the broth to the heated skillet along with the half and half. Let simmer for about 3 minutes. Stir in the Parmesan cheese. Then add the cooked pasta and all of the veggies along with the frozen peas. Stir together and let cook for about 5 minutes. The liquid should cook down. Serve with chopped herbs and more cheese if desired.

2 medium zucchini or 1 large zucchini, cut into thin strips
2 yellow squash, cut into thin strips
1 onion, thinly sliced
1 yellow bell pepper, cut into thin strips
1 red bell pepper, cut into thin strips
1/4 cup olive oil
Kosher salt and freshly ground black pepper
1 tablespoon dried Italian herbs or herbes de Provence
1 pound farfalle (bowtie pasta)
15 cherry tomatoes, halved
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F.
  • On a large heavy baking sheet, toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Transfer half of the vegetable mixture to another heavy large baking sheet and arrange evenly over the baking sheets. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total.
  • Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
  • Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste. Sprinkle with the Parmesan and serve immediately.

  • For sauce, in a small saucepan heat oil over medium. Add onion and garlic; cook 3 to 4 minutes or until onion is tender, stirring occasionally. Stir in cauliflower and broth. Bring to boiling; reduce heat. Simmer, covered, 15 minutes or until tender; cool slightly. Transfer to a food processor. Add the water, cheese, salt and black pepper. Cover and process until smooth.
  • Meanwhile, cook pasta according to package directions, adding broccoli and sweet pepper the last 5 minutes. Drain, reserving 1/4 cup of the pasta cooking water.
  • Coat a 10-inch skillet with cooking spray; heat over medium. Add chicken; cook 10 minutes or until done (165 degrees F), turning once. Stir in sauce and pasta mixture. ½ lb. dry penne pasta
1 cup broccoli florets
1 tablespoon olive oil
1 boneless, skinless chicken breast (about 8 ounces)
Kosher salt and ground black pepper, to taste
3 tablespoons salted butter
2 cloves garlic, minced
4 asparagus spears, chopped
½ cup diced zucchini
¼ cup diced sweet bell pepper
8 cherry tomatoes, halved
¼ cup chicken broth, or more as needed
½ cup heavy cream, at room temperature
½ cup finely-grated Parmesan cheese
½ cup frozen peas, thawed
¼ cup minced fresh chives (or sub with thinly-sliced green onions)
2 tablespoons chopped fresh basil leaves (or sub with 1 teaspoon dried basil)

Steps:

  • Cook pasta in a large pot of salted boiling water for 1 minute less than al dente, according to package instructions (that was about 9 minutes total for my box of penne). During the final 3 minutes of cooking time, add the broccoli florets to the boiling water with the pasta. Drain.
  • Meanwhile, heat olive oil in a large skillet or Dutch oven over medium-high heat. Season the chicken with salt and pepper on both sides. Cook the chicken in the oil until browned on both sides and juices run clear, about 5-7 minutes per side. Remove the chicken to a cutting board, let rest for 5 minutes, and then slice into thin strips.
  • In the same pan, melt the butter over medium heat. Add the garlic and stir until fragrant, about 30 seconds. Stir in asparagus, increase the heat to medium-high, and cook for 1 minute. Add the zucchini and bell pepper, cook for 1 minute. Stir in the tomatoes and cook for 1 more minute.
  • Add the chicken broth, increase the heat and bring the mixture to a boil.
  • Reduce heat to low so that the liquid is at a gentle simmer. Stir in the cream and Parmesan until smooth.
  • Add the cooked pasta, broccoli, peas, chives and basil to the sauce. Let it bubble and thicken slightly, stirring frequently, until all of the ingredients are warmed through, about 2 more minutes. Taste and season with salt and pepper, if necessary. Stir in the chicken and serve immediately.

1/3 C. dry white wine
1/3 C. finely sliced green onions

9 oz. fresh linguini, cooked according to package directions

Steps:

  • Heat oil in a large, heavy, nonstick skillet or wok. Add the chicken and saute until opaque and nearly done. Remove and set aside to keep warm. Add carrots, broccoli and garlic to drippings still in skillet and saute briefly. Add dry basil now, with salt, cayenne and chicken stock. Cover and simmer for 2-3 minutes or until crisp-but-tender. Add wine and green onion. Saute briefly. Return chicken to pan and heat through. If using fresh basil, stir it in now. Toss the chicken mixture with noodles and pass the Parmesan. Makes 4 servings.

1 (6-ounce) can marinated artichoke hearts
½ cup diced onion

¾ cup julienned red bell pepper
¾ cup julienned yellow bell pepper
1 cup sliced mushroom
1 tbsp chopped oregano
2 tsps chopped thyme
2 cups fat-free half and half
¼ cup fat-free sour cream
½ cup reduced fat, grated Parmesan cheese
salt and black pepper to taste

Steps:

  • In a large skillet, heat olive oil over medium-high heat. When oil is hot, add liquid from artichoke hearts. Chop artichokes into bite-sized pieces and reserve for later. Bring liquid to a simmer and add onions, garlic and bell peppers. Sauté for 3-5 minutes or until softened. Add artichoke hearts, mushrooms, oregano and thyme and sauté for 2-3 additional minutes. Add half and half, bring to a simmer then reduce slightly. Remove from heat and add sour cream and cheese. Stir until cheese is melted. Season to taste with salt and pepper.   • Place a large stock pot of water over high heat. As the water begins to boil, add a tablespoon of salt. Stir in the pasta and cook according to package instructions.
  • When the pasta is almost al dente, drop the red peppers, snow peas, broccoli, and carrots into the boiling water to blanche for one minute. Then drain the pasta and veggies in a colander, reserving 2 cups of pasta water. Set the pasta water aside and rinse the pasta and veggies with cold water.
  • Using the same pot, place the pasta water, cream cheese, and garlic over medium heat. Bring to a simmer and whisk to create a thin smooth cream sauce. Once the sauce is completely smooth, add the pasta and blanched vegetables back to the pot. Stir well to coat the pasta.
