MARK'S LOW FAT CHICKEN FAJITAS
I found this somewhere on the Web. I never thought of adding zucchini to fajitas but it really gives it a good flavor. We even eat this when NOT on Weight Watchers! One serving of 2 tortillas is 5 points.

Steps:
- Spray a large nonstick skillet with cooking spray and heat over high heat.
- Add vegetables and saute over high heat until crisp-tender (about 5 minutes).
- Remove vegetables from skillet and keep warm.
- Re-heat skillet over high heat, add chicken and seasoning ingredients and toss well to coat.
- Continue cooking until chicken is no longer pink (about 10 minutes).
- Add 1/4 Cup of water and simmer for 5 minutes.
- Return vegetables to skillet and heat through.
- Serve on tortillas with salsa, reduced fat cheese or sour cream, etc.
- Warm tortillas to make them more pliable.

- Marinate chicken overnight in Mrs. Dash marinade, my Wet Rub from the South https://www.justapinch.com/recipes/sauce-spread/sauce-spread-spread/wet-rub-from-the-south.html
- Slice bell pepper and onion. Grate cheese. Make salsa or pico de gallo.
- Cook chicken and veggies on outside or inside grill. Spray tortilla's on both sides with olive oil spray. Heat on grill on both sides just long enough to soften.
- Slice chicken into thin slices, place on corn tortilla with pepper and onion, top with cheese and salsa or pico de gallo.

- In a gallon freezer bag combine the cayenne, chili powder, oregano, garlic powder, salt, and lime juice. Mix well then add in the sliced chicken and mix again.
- Heat a large skillet over medium-high heat. Spray with olive oil and add in the bell peppers, onions and jalapeño. Cover and cook for 5 minutes, mixing once.
- Push the veggies to the sides and add in the chicken and marinade. Cook for 10 minutes flipping the chicken once.

- In a small bowl, mix together the seasoning ingredients. You can divide each of them in half and mix them in two different bowls, as I do in the video below. Half will season the veggies and half will season the chicken.
- Heat 1 tablespoon of the oil in a large, deep skillet over medium-high heat, about 2 minutes. Add the bell peppers, the onions, and half the seasoning mix. Cook, stirring often, until just tender, about 5 minutes. If the bottom of the skillet becomes too dry, add a little water, a tablespoon at a time. You can also reduce the heat to medium.
- Using a slotted spoon, remove the vegetables to a plate. Add the remaining oil to the skillet, then add the chicken slices with the second half of the seasonings. Stir-fry until the chicken is almost fully cooked, about 4 minutes. Again, if the bottom of the skillet becomes too dry while you cook the chicken, add a little water.
- Return the vegetables to the skillet. Stir-fry everything together for 1-2 more minutes, until the chicken is fully cooked and the dish is heated through.
