EASY CHEESY PASTA | SLIMMING & WEIGHT WATCHERS FRIENDLY
Steps:
- Preheat oven to 200°C. Make the pasta up as per instructions on the pack, then drain and place in a bowl
- Mist a frying pan with low calorie cooking spray and cook the onion until brown
- Add the onion to the cooked pasta along with the Primula and stir well
- Transfer to an oven proof dish, sprinkle the cheese on top and bake for about 15-20 minutes until golden brown
- Cook the tomatoes, basil and salt until the tomatoes start to ooze
- Plate up the pasta and serve the tomatoes on the side!

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Bring a large pot of water to a boil.
- Drop lasagna noodles into water and add 1 teaspoon of olive oil. Cook until noodles are tender but still slightly firm, about 8 minutes.
- Drain water from the noodles and let cool.
- Heat 2 tablespoons olive oil in a large skillet over medium heat.
- Cook and stir garlic and eggplant chunks until eggplant is partially cooked, about 7 minutes.
- Pour tomato sauce into the skillet and simmer until eggplant is tender, 10 to 15 minutes.
- Combine ricotta cheese, cottage cheese, mozzarella cheese, Parmesan cheese, salt, black pepper, and egg in a bowl.
- Mix spinach into ricotta cheese mixture.
- Spread a layer of tomato sauce mixture into the bottom of a 9x12-inch baking dish.
- Place 4 noodles on top of the sauce, overlapping if necessary.
- Spoon 1/3 of the remaining tomato sauce over noodles.
- Spread 1/3 of the ricotta mixture over the tomato sauce
- Repeat layers twice more, starting with noodles and following with sauce and ricotta mixture.
- Top the lasagna with mozzarella cheese.
- Bake in preheated oven until the ricotta filling is set and mozzarella cheese topping is lightly browned, 45 minutes to 1 hour.

LOW FAT CHEESY JUMBO PASTA SHELLS WITH GROUND TURKEY
A great lowfat version! This is rich, creamy and your family will love it. I make it without meat as well. It's great either way.

- In an 8 quart pot, bring water to a boil and cook shells according to package directions.
- Drain and cool immediately with cold water.
- Drain and place open side down on paper towels.
- Meanwhile brown ground turkey with onion and garlic; drain fat.
- Combine the next 8 ingredients.
- In a medium bowl, combine ground turkey and the cheese mixture.
- Reserve the 1/4 cup of Mozzarella.
- Place a thin layer of spaghetti sauce into the bottom of a 12 x 9 x 2 inch baking dish.
- Preheat oven to 375 degrees Fahrenheit.
- Spoon the cheese/meat mixture into each pasta shell and place open side up, in a single layer, in prepared pan. I don't usually use all 12 ounces of noodles.
- Pour the remaining sauce (RESERVE 1 Cup Sauce) over the stuffed shells.
- Loosely cover with foil and bake for 40 minutes.
- During last 5 minutes of baking, remove foil and sprinkle remaining Mozzarella cheese on top.
- Bake 5 more minutes.
- Garnish with fresh chopped basil. I like to have a side of warm spaghetti sauce to drizzle over; especially for left-overs.

LOW FAT CHEESY PASTA
I adapted this from a similar recipe on recipezaar to suit my low fat diet needs. This is a GREAT base recipe or even great on it's own! You can put virtually anything in this and it's fun to play around with the cheese too...sometimes i sue a parmesan and fontina blend to give it a little bit of a different flavor. I prefer to use Barilla Plus pasta for this. I love the lightness of this cheese sauce, it's a great alternative to Alfredo!

- Cook box of penne per package directions and keep warm.
- Mince garlic and sauté in butter/olive oil blend until garlic is slightly golden.
- Add broth and milk.
- Add 3 tsp flour, salt/pepper to taste.
- Simmer and stir constantly until sauce thickens.
- Pour over warm pasta, coat and enjoy!
- **You can put anything in this, chicken, broccoli, any vegetables -- play with it! Have fun with it!

- Cook the pasta, adding the broccoli for the final 4-5 mins and cooking until tender. Drain well, then heat the grill.
- Heat the Cream cheese in a saucepan and stir in the flour. Cook for 1 min, then gradually add the milk, stirring well between each addition. Bring to the boil, stirring, then simmer for 2 mins, before stirring in the mustard, half the cheese and seasoning.
- Mix the pasta and broccoli into the sauce and spoon into an ovenproof dish. Scatter over the remaining cheese and place under a hot grill for 3-4 mins until golden and bubbling.
