Steps:
- Preheat oven to 350 degrees F.Spray a 9X5 loaf pan with non-stick cooking spray.
- Combine dry ingredients (flours, spices, baking soda, and baking powder) in a medium bowl. Set aside.
- In another large bowl, beat egg till fluffy,
- Then beat in other wet ingredients (oil, yogurt, sugar, and vanilla.) Stir in grated carrots.
- Add dry mixture to wet mixture and stir until combined.
- If you are adding pineapple, add it here.
- Pour batter into greased loaf pan.
- Bake at 350F for approximately 50 minutes or until a toothpick or cake tester inserted comes out clean.
- Let cool in pan 5 minutes, then remove from pan and cool completely on a wire rack.

I have been making carrot cake for years, and each time it seems to improve with a little tinkering here and there. A few years ago I attempted a low-fat version rather reluctantly, not believing it was possible. Now I have to admit it's become one of my favourites. - Begin by whisking the 6 oz (175 g) sugar, eggs and oil together in a bowl using an electric hand whisk for 2-3 minutes. Then sift together the flour, bicarbonate of soda and the mixed spice into the bowl, tipping in all the bits of bran that are left in the sieve. Now stir all this together, then fold in the orange zest, carrots and sultanas. After that pour the mixture into the prepared tin and bake on the centre shelf of the oven for 35-40 minutes, until it is well risen and feels firm and springy to the touch when lightly pressed in the centre. While the cake is cooking, make the topping by mixing all the ingredients in a bowl until light and fluffy, then cover with clingfilm and chill for 1-2 hours or until needed. Now you need to make the syrup glaze, and to do this whisk together the fruit juices and sugar in a bowl. Then, when the cake comes out of the oven, stab it all over with a skewer and quickly spoon the syrup over as evenly as possible. Now leave the cake on one side to cool in the tin, during which time the syrup will be absorbed. Then, when the cake is completely cold, remove it from the tin, spread the topping over, cut it into 12 squares and dust with a little more cinnamon.
HEALTHY CARROT CAKE BREAKFAST QUICK BREAD
This is one of my favorite healthy breakfast loaves! It tastes just like carrot cake with plenty of cozy spices and sweet carrots, and it's perfect for serving company or just lazy weekend brunches. The leftovers will keep for at least one week if stored in the refrigerator in an airtight container or tightly wrapped in plastic wrap.

- Preheat the oven to 350°F, and coat a 9x5" loaf pan with foil.
- Whisk together the flour, cinnamon, nutmeg, baking powder, baking soda, and salt in a medium bowl. In a separate bowl, whisk together the butter, egg whites, vanilla extract, and stevia. Stir in the Greek yogurt, mixing until no large lumps remain. Stir in 2 tablespoons of milk. Alternate between adding the flour mixture and remaining milk, beginning and ending with the flour mixture, and stirring just until incorporated. (For best results, add the flour mixture in 3 equal parts.) Gently fold in the carrots.
- Spread the batter into the prepared pan. Bake at 350°F for 40-50 minutes or until the top feels firm to the touch and a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

- Preheat oven to 180°C.
- Finely chop onion and garlic then cook in the oil until the onion is soft.
- Add the sliced mushrooms and continue cooking until they have softened.
- Transfer the onion and mushroom mixture to a medium sized bowl and then add the next 9 ingredients. Mix well together, then pour into a well greased and lined loaf tin.Sprinkle with the remaining breadcrumbs and cheese. Dust lightly with the paprika.
- Cover loaf tin with foil and bake for 30 minutes, then uncover and bake a further 30 minutes or until the centre is firm when pressed.

- Bring to the boil, simmer 15 minutes.
- Set aside to cool.
- Fold in sifted flours and bananas.

- If you have a food processor, you can just add roughly cut chunks of the cored apples and carrots to the bowl, and blitz until it looks as though they’ve been grated. Add the flour, baking powder, cinnamon and egg, and whizz briefly. Then add around 3 tbsp milk until you have a softish texture. Finally, stir in the sultanas by hand (otherwise they will become chopped and disappear into the mixture)
- If you are making the loaf by hand, just add the grated apple, carrot and sultanas to a bowl, along with the dry ingredients. Beat the egg and add to the mixture with the milk and mix to a soft consistency.
- Spoon into a 7x3 loaf tin which you have lined with buttered greaseproof paper and bake at 180 for 50 mins. Remove from the tin and paper when cool.
