This is an easy recipe for Chicken Tikka Masala--chicken marinated in yogurt and spices and then served in a tomato cream sauce. Serve with rice or warm pita bread.

1 cup yogurt
1 tablespoon lemon juice
2 teaspoons fresh ground cumin
1 teaspoon ground cinnamon
2 teaspoons cayenne pepper
2 teaspoons freshly ground black pepper
1 tablespoon minced fresh ginger
1 teaspoon salt, or to taste
3 boneless skinless chicken breasts, cut into bite-size pieces
4 long skewers
1 tablespoon butter
1 clove garlic, minced
1 jalapeno pepper, finely chopped
2 teaspoons ground cumin
2 teaspoons paprika
1 teaspoon salt, or to taste
1 (8 ounce) can tomato sauce
1 cup heavy cream
¼ cup chopped fresh cilantro

Steps:

  • In a large bowl, combine yogurt, lemon juice, 2 teaspoons cumin, cinnamon, cayenne, black pepper, ginger, and salt. Stir in chicken, cover, and refrigerate for 1 hour.
  • Preheat a grill for high heat.
  • Lightly oil the grill grate. Thread chicken onto skewers, and discard marinade. Grill until juices run clear, about 5 minutes on each side.
  • Melt butter in a large heavy skillet over medium heat. Saute garlic and jalapeno for 1 minute. Season with 2 teaspoons cumin, paprika, and 1 teaspoon salt. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes. Add grilled chicken, and simmer for 10 minutes. Transfer to a serving platter, and garnish with fresh cilantro.

Tender chunks of boneless chicken breast cooked in an aromatic creamy tomato sauce. Chicken tikka masala, probably the most popular dish on the menu of any Indian restaurant here in the states, but ironically this dish is claimed to be originally from Britain and is actually Britain's national dish.

2 tsp canola oil or you could use butter
1 small onion (minced)
1 tbsp fresh ginger (grated)
3 cloves garlic (crushed)
1 1/2 cups crushed tomatoes
4 oz fat free yogurt (I used Chobani)
1/2 cup 1% milk
1 tbsp cumin
1 tbsp garam masala
1 tsp turmeric (optional)
1/2 tbsp chili powder
salt to taste
16 oz 2 boneless chicken breasts, cut into bite sized pieces
4 tbsp fresh cilantro (or to taste)

Steps:

  • Heat oil in a large heavy skillet over medium heat. Add the onions and cook until golden.
  • Add the crushed ginger, stir for a few minutes then add the garlic and cook another minute. Add cumin, garam masala, turmeric, chili powder, and salt; mix well until fragrant, about 2 minutes.
  • Stir in tomatoes, yogurt and milk. Simmer on low heat until sauce thickens, about 10 minutes.
  • Add chicken and simmer for 10 - 15 minutes or until cooked through.
  • Add a generous amount of chopped cilantro and serve with Bamati Rice or Naan.

2 teaspoons cumin
1 1/2 teaspoons paprika
1/2 teaspoon cardamom
1/2 teaspoon cayenne pepper
1/4 teaspoon nutmeg
1 tablespoon avocado oil
2 chicken breasts (about 1 pound total, cut into 1/2 inch pieces)
sea salt and pepper
1 yellow onion (peeled and chopped)
1 tablespoon fresh ginger (minced)
1/4 cup tomato paste
1 cup cream
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 cup fresh cilantro finely chopped

Steps:

  • In a small bowl, whisk together the coriander, cumin, paprika, cardamom, cayenne pepper, and nutmeg. Set aside.
  • Heat a large skillet over medium heat. Add oil. When oil is hot, add chicken pieces. Be sure they do not touch. Cook in batches if necessary.
  • Brown chicken, then cook until opaque. Remove from pan to a plate. Set aside.
  • If needed, add more oil to pan. Add onions and cook them until they just start browning on the edges.
  • Stir in the mixture of spices. Cook for about two minutes, stirring constantly, to toast spices.
  • Add fresh ginger, tomato paste and cream to the skillet, stirring to mix thoroughly. Add the chicken into the sauce. Increase heat to medium to bring the mixture to a simmer, then turn the heat to low and continue cooking, stirring occasionally, until sauce thickens to desired consistency.
  • Season with salt and pepper. Stir in cilantro. Taste and adjust seasoning if necessary.

5 skinless chicken breasts (750g, diced into 2cm cubes)
1/2 cup plain yogurt (120g)
3 garlic cloves (minced)
1 tbsp fresh ginger (grated (6g))
2 tsp garam masala
1 tsp each cumin, paprika
3/4 tsp salt
1 tbsp lemon juice (optional)
2 tbsp butter
1 small yellow onion (diced (70g))
2 garlic cloves (minced)
1 tbsp fresh ginger (grated (6g))
1 tsp each garam masala, cumin, ground coriander
1/2 tsp each turmeric, paprika, chili powder
1.5 cups passata sauce ((360g) )
1 tbsp tomato puree
3/4 tsp salt
1 cup heavy cream
3/4 tsp golden erythritol (So Nourished) (optional)
water to thin

Steps:

  • Add the diced chicken to a large bowl with the chicken marinade ingredients and mix to combine. Leave to marinade for at least 15 minutes or ideally overnight, covered in the fridge.
  • Heat 1 tbsp of butter or oil in large non-stick frying pan. Fry the chicken for about 3 minutes per side, or until golden and almost cooked through. About 8 minutes in total. Remove from the pan.
  • Add the remaining 1 tbsp of butter to the pan and fry the onions for 3 minutes on a medium heat until golden. Add the garlic, ginger and spices and fry for 1 more minute until fragrant. Add the passata. Turn the heat down to a simmer and cook for a further 10 minutes or until thick.
  • Add the cream and optional low carb sweeter. Put the chicken back in the pan and cook for about 5 minutes until the chicken is fully cooked through and warm.

28 oz (800g) boneless and skinless chicken thighs (cut into bite-sized pieces)
1 cup plain yogurt
1 1/2 tablespoons minced garlic
1 tablespoon ginger
2 teaspoons garam masala
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon Kashmiri chili ((or 1/2 teaspoon ground red chili powder))
1 teaspoon of salt
2 tablespoons of vegetable/canola oil
2 tablespoons butter
2 small onions ((or 1 large onion) finely diced)
1 1/2 tablespoons garlic (finely grated)
1 tablespoon ginger (finely grated)
1 1/2 teaspoons garam masala
1 1/2 teaspoons ground cumin
1 teaspoon turmeric powder
1 teaspoon ground coriander
14 oz (400g) tomato puree ((tomato sauce/Passata))
1 teaspoon Kashmiri chili ((optional for colour and flavour))
1 teaspoon ground red chili powder ((adjust to your taste preference))
1 teaspoon salt
1 1/4 cups of heavy or thickened cream ((use evaporated milk for lower calories))
1 teaspoon brown sugar
1/4 cup water (if needed)
4 tablespoons Fresh cilantro or coriander (to garnish)

Steps:

  • In a bowl, combine chicken with all of the ingredients for the chicken marinade; let marinate for 10 minutes to an hour (or overnight if time allows).
  • Heat oil in a large skillet or pot over medium-high heat. When sizzling, add chicken pieces in batches of two or three, making sure not to crowd the pan. Fry until browned for only 3 minutes on each side. Set aside and keep warm. (You will finish cooking the chicken in the sauce.)
  • Melt the butter in the same pan. Fry the onions until soft (about 3 minutes) while scraping up any browned bits stuck on the bottom of the pan.
  • Add garlic and ginger and sauté for 1 minute until fragrant, then add garam masala, cumin, turmeric and coriander. Fry for about 20 seconds until fragrant, while stirring occasionally.
  • Pour in the tomato puree, chili powders and salt. Let simmer for about 10-15 minutes, stirring occasionally until sauce thickens and becomes a deep brown red colour.
  • Stir the cream and sugar through the sauce. Add the chicken and its juices back into the pan and cook for an additional 8-10 minutes until chicken is cooked through and the sauce is thick and bubbling. Pour in the water to thin out the sauce, if needed.
  • Garnish with cilantro (coriander) and serve with hot garlic butter rice and fresh homemade Naan bread!

1 medium onion, diced
1/2 teaspoon crushed ginger
1 teaspoon crushed garlic
