OVEN FRIED BISQUICK CHICKEN
A favorite at our house. I got this off of a box of bisquick about 30 years ago and have been making it ever since.

Steps:
- Preheat oven to 425°F.
- Melt butter in 13 x 9 x 2 baking pan in the hot oven.
- Mix dry ingredients together very well and coat chicken.
- Place chicken skin side down in hot butter and bake 35 minutes; turn and bake another 15 minutes.

LOW-FAT BISQUICK OVEN FRIED CHICKEN
I make this about once a week at our house. All three kids like it (and hubby too) and it is one of my own favorites as well. It's such a great alternative to the heavily-fried chicken, but I'm telling you...it tastes JUST as great!

Steps:
- Place butter in 13x9 pan. Preheat oven to 425°F and place pan and butter in oven while it's preheating.
- Combine Bisquick, paprika, salt, and pepper in a large resealable bag.
- Skin chicken, if desired. Rinse each piece under cold water. Then place in bag, one or two pieces at a time, and shake to coat well.
- When butter is melted in pan (pan should be hot), place meat in pan, meaty sides down.
- Bake 35 minutes; turn pieces over and bake an additional 10-15 minutes or until internal temperature reaches 160°F.
- Excellent with mashed potatoes, biscuits, and green beans!

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 13x9 inch baking dish.
- In a shallow dish, combine the biscuit mix, pecans, paprika, salt, poultry seasoning and sage.
- Dip the chicken pieces in the evaporated milk then coat generously with the pecan mixture. Place pieces in the prepared baking dish and drizzle with the melted butter or margarine.
- Bake at 350 degrees F (175 degrees C) for 1 hour or until juices run clear.

BISQUICK CHICKEN TENDERS
Bisquick chicken tenders are a classic, kid-friendly dinner everyone loves. This Bisquick ultimate chicken fingers recipe takes only 20 minutes from start to finish. Prepare them easily in the oven or air fryer.

- Preheat oven to 450°F. Line baking sheet with foil and spray with cooking spray, or line with parchment paper.
- Add beaten egg to a small tray or rimmed plate. Mix Bisquick, cheese, garlic salt and paprika together and add to 1-gallon resealable plastic food-storage bag.
- Dip the chicken strips into egg; then place in bag of Bisquick mixture. Seal bag; shake to coat. Then REPEAT the process by dipping chicken into egg and shaking in Bisquick mix again. You don't want to skip this step - it makes the chicken crispy and perfectly breaded. Place chicken on prepared baking sheet. Drizzle butter over chicken.
- Bake 14 minutes. Using tongs, turn chicken tenders half way through (7 minutes). Use an instant read meat thermometer to check temperature of chicken tenderloins. Poultry should be cooked until the internal temperature is 165ºF. Serve with your favorite dipping sauces like honey mustard or ranch.
- Spray air fryer basket with cooking spray. Preheat air fryer according your manufacturer's directions.

- Preheat your oven to 435 degrees Fahrenheit and set aside a sheet pan.
- In a large bowl or plastic Ziploc bag, add the flour, breadcrumbs, paprika, seasoning salt, pepper, garlic powder, chili powder, and cayenne pepper. Toss or stir well to combine.
- Add the chicken strips to the flour mixture and toss very well to coat.
- Add the butter to the sheet pan and place it in the oven to preheat until the pan is hot and the butter is melted.
- Distribute the butter over the pan using a spoon or pastry brush, and place the coated chicken strips in the butter on the sheet pan.
- Spray the tops of the chicken strips with the vegetable oil cooking spray just before placing the pan in the oven.
- Turn the chicken strips after 10 minutes in the oven. Spray with a small amount of additional vegetable oil cooking spray when you turn them, if needed.
- Bake for another 5-10 minutes, or until both sides are crispy and the chicken tenders are cooked through.
