ALMOST NO FAT BANANA BREAD
This bread is surprising moist and has a wonderful flavor. For a little variation, you can add nuts or raisins.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
- In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan.
- Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.

- Preheat the oven to 350°F, and coat a 9"-square pan with nonstick cooking spray.
- In a medium bowl, whisk together the oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt. In a separate bowl, whisk together the coconut oil, egg whites, and vanilla. Add in the mashed banana and Greek yogurt, stirring until no large lumps of yogurt remain. Stir in the maple syrup. Alternate between adding the oat mixture and milk, beginning and ending with the oat mixture, and stirring just until incorporated. (For best results, add the oat mixture in 3 equal parts.)
- Spread the batter into the prepared pan. Bake at 350°F for 26-29 minutes or until the center feels firm to the touch and a toothpick inserted into the center comes out clean. Cool completely to room temperature in the pan before slicing and serving.

- 1. In an ungreased 9 X 13 pan stir together the flour, sugar, baking soda, salt and cinnamon.
- 2. Add the bananas, melted butter, cold water and vinegar. Stir just until combined.
- 3. Sprinkle the mini chocolate chips evenly over the top of the cake.

LOW FAT BANANA CAKE
This is a spin off of Kittencal's (that genius girl) extreme low fat banana-blueberry muffins. But it was different enough ( I made the muffins a while back), that I decided to post the difference. This cake was wonderful! No one would guess it was low fat with little sugar except the fruit! You can use nonfat sourcream for the yogurt, but I haven't tried that.

- Position an oven rack in the center and preheat oven to 350 degrees. Grease an 8 x 8-inch or 9 x 9-inch square baking pan.
- In a large bowl, with an electric mixer, beat the coconut oil and sugar until well blended. Add the eggs and vanilla and beat well. Dissolve the baking soda in the buttermilk and add to the mixture.
- Add the mashed bananas and beat until well blended.
- Add the flour and stir just until combined.
- Pour the batter into the prepared pan, spreading it out evenly.
- Bake until a toothpick inserted in the center comes out clean, 45 to 50 minutes.
- Remove from the oven and place the baking pan on a wire rack to cool completely.
- To make the frosting, place the butter and water in a very small saucepan and heat to boiling. Pour over the sugar. Stir in the peanut butter until well blended and creamy.
- Quickly spread the frosting over the cooled cake.

Had an old banana laying around, looked up a wacky cake recipe and edited it to the types of food I usually eat. (aka: low fat/healthier) It is pretty gooey, but I may not have cooked it long enough, also a little chewy because of the oatmeal.

- Preheat oven to 180 c/ gas mark 4 and line a loaf tin of baking paper
- In a medium bowl beat sugar and butter till smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until well blended
- Mix in the flour, bicarbonate of soda and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients
- Bake till the top is firm to the touch and golden brown in colour. When bread is removed from the oven, allow to cool on its side for 10 minutes, then remove from tin and let cool on wire rack
