2/3 pound fresh asparagus, trimmed and cut into 1-inch pieces
1-1/2 cups egg substitute
5 tablespoons shredded Parmesan cheese, divided
1/4 teaspoon salt
1/8 teaspoon pepper
2 teaspoons olive oil
1 medium onion, chopped
2 tablespoons minced fresh parsley
1/4 cup shredded reduced-fat cheddar cheese

Steps:

  • Preheat broiler. In a large saucepan, bring 4 cups water to a boil. Add asparagus; cook, uncovered, 2-4 minutes or just until crisp-tender. Drain asparagus and immediately drop into ice water. Drain and pat dry., In a small bowl, whisk egg substitute, 3 tablespoons Parmesan cheese, salt and pepper., In a 10-in. ovenproof skillet, heat oil over medium-high heat. Add onion; cook and stir until tender. Stir in asparagus and parsley. Pour in egg mixture. Reduce heat to medium; cook, covered, 8-10 minutes or until eggs are nearly set. Uncover; sprinkle with remaining Parmesan cheese., Broil 5-6 in. from heat 2-3 minutes or until eggs are completely set. Sprinkle with cheddar cheese. Cut into quarters.

2 tablespoons olive oil
2 potatoes, shredded
¼ cup chopped onion
½ teaspoon salt
¼ teaspoon fresh ground black pepper
1 pound asparagus, trimmed and cut into 2-inch pieces
1 cup diced ham
6 eggs
1 tablespoon milk
½ cup shredded mozzarella cheese
½ cup shredded white Cheddar cheese
1 tablespoon chopped fresh basil

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Heat the olive oil in a large skillet over medium heat; cook and stir the shredded potato and onion in the hot oil until the potatoes begin to brown, about 5 minutes.. Season with salt and pepper. Add the asparagus and ham and continue cooking until the asparagus is tender, another 5 to 7 minutes; transfer to the prepared baking dish. Whisk the eggs and milk together in a small bowl; pour evenly over the dish. Scatter the mozzarella and white Cheddar cheeses over the top of the potato mixture.
  • Bake in the preheated oven until set in the middle, 20 to 25 minutes. Garnish with the basil to serve.

1 tsp salt, or seasoning salt or mrs. dash
cooking spray for coating pan
1 c egg beaters
1 c reduced fat swiss cheese, shredded
1 c skim milk or 1%
1 jar(s) asparagus cut into 1-inch lengths
1 small onion, very thinly sliced
1 tsp ground black pepper
1 medium tomato, coarsely chopped

Steps:

  • 1. Preheat broiler. Mix Egg Beaters, cheese, and milk in a medium bowl until well blended; set aside.
  • 2. Spray medium oven-going skillet with cooking spray or wipe thinly with oil. Heat over medium heat. Add asparagus, onion, salt or seasoning salt, and pepper; cook and stir 3 minutes until vegetables are cooked but not too soft. Add tomatoes; cook 1 minute longer, stirring occasionally.
  • 3. Pour Egg Beaters mixture into skillet with vegetables. Reduce heat to low; cover skillet with lid. Cook 12 minutes, or until bottom of frittata is set but top is still slightly moist. Remove lid from skillet.
  • 4. Place skillet under broiler. Broil 2 minutes, or until top is set but not browned. Cut into 4 wedges to serve.

3 tablespoons olive oil
½ pound fresh asparagus, trimmed and cut into 1 inch pieces
½ pound fresh mushrooms, sliced
6 eggs
1 tablespoon water
1 teaspoon chopped fresh thyme
3 tablespoons freshly grated Parmesan cheese
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Melt butter in an oven-safe skillet over medium heat. Stir in olive oil and asparagus, and cook until the asparagus is tender, about 10 minutes. Stir in the mushrooms, and continue cooking about 5 minutes.
  • In a medium bowl, whisk together eggs, water, and thyme. Pour into the skillet, and reduce heat to low. Cover, and cook 5 minutes.

2 -3 medium zucchini, sliced
1/2 cup diced onion
1 clove fresh garlic, minced fine
1 cup cooked white rice (a good use for leftover rice)
1 cup egg substitute or 1 cup egg white
2 tablespoons grated parmesan cheese
1/2 cup grated mozzarella cheese
4 -5 tablespoons extra virgin olive oil
salt (roughly 1/4 teaspoon)
ground pepper

Steps:

  • Clean and slice the zucchini in half, lengthwise, then into 1/8-inch pieces.
  • Dice onion and mince garlic (use as much as you like) Saute zucchini, onions and garlic in 2 tablespoons olive oil until onions and zucchini are limp.
  • Salt and pepper to taste.
  • Mix rice, Parmesan, grated mozzarella and eggs in a bowl.
  • Stir in saute of zucchini, onion and the rest, salt and pepper to taste, Mix all ingredients well.
  • Heat 9-by-12-inch nonstick fry pan between medium and medium-high heat, and add 2 to 3 tablespoons of extra virgin olive oil.
  • When pan is hot, pour contents of mixing bowl into fry pan, spread mixture evenly around pan, making sure that the rice and veggies are spread through the liquid.
  • When the frittata is brown on the bottom, use a plate to turn it over.
  • Cook until both sides are brown and firm.
  • Slice and serve, It can be eaten hot or cold as an appetizer, slice into 1- inch cubes or if sliced larger, as an entree.

This comes from a cookbook called "Food to Live By". So far every single recipe I've tried from it has been AMAZING. This one was no exception. I used honey ham deli meat for the ham, egg beaters and soymilk instead of milk.

1 tablespoon unsalted butter
1/3 cup finely sliced leek, white and light green parts
1 garlic clove, thinly sliced
4 asparagus spears, woody ends trimmed
1/2 cup ham, cut into 1/3 inch dice
6 large eggs
1/4 cup milk
2 teaspoons fresh dill, minced
1 tablespoon fresh chives, finely chopped
1 teaspoon lemon zest, grated
salt & fresh ground pepper
1/3 cup parmesan cheese or 1/3 cup romano cheese, grated

Steps:

  • melt butter in an 8 or 9 inch nonstick, ovenproof skillet over low heat. Add the leek and garlic and cook very slowly, stirring frequently, until soft and golden, about 10 minutes, then set skillet aside off the heat.
  • Meanwhile, fill a large bowl with water and ice cubes and set aside.
  • Bring a skillet of salted water to a boil over high heat. Add the asparagus spears and cook until blanched, about 2 minutes. Immediately drain the asparagus in a colander, then plunge into the bowl of ice water to stop the cooking. Drain asparagus again.
  • Cut asparagus spears into 1/2 inch pieces. Scatter asparagus and ham over the leek mixture in the skillet.
  • Preheat the broiler and set the rack about 5 inches from the heat source.
  • Place the eggs and milk in a medium bowl and whisk to combine. Add dill, chives and lemon zest, then season with salt and pepper.
  • Add the egg mixture to the skillet with the leek mixture and cook, without stirring, over medium-low heat until the bottom and sides have set, about 4 minutes. The top of the frittata will still be wet.
  • Sprinkle the cheese over the frittata and place the skillet under the broiler. Cook until the top puffs and turns golden brown, 3-5 minutes. Remove from the broiler and let it rest for 2 minutes.
  • Run a heat-proof rubber spatula or small knife around the edge of the frittata to release it from the skillet. Slide it onto a serving plate. Cut into 4 wedges and serve hot.

  • Preheat oven to 350-degrees F.

  • Stir in roasted peppers. Spread vegetable mixture in prepared pan.
  • Sprinkle with half of the mozzarella.
  • In a bowl bowl whisk together next 5 ingredients (egg substitute - pepper) and then whisk in the flour.
  • Pour egg mixture over vegetables.
  • Bake for 35 minutes or until puffed.
  • Sprinkle with remaining cheeses and let stand 10 minutes before serving.

1/3 cup long-grain rice
1 1/2 pounds asparagus
1 or 2 bunches of chives to yield 1/2 cup
8 ounces whole red pepper or 7 ounces chopped, ready-cut red pepper (1 1/2 cups)
A few sprigs fresh thyme to yield 1 teaspoon thyme leaves
1/2 pound cooked, peeled shrimp
1 orange
1 1/2 ounces Parmigiano Reggiano (7 heaping tablespoons coarsely grated)
2 large eggs
5 egg whites
1 teaspoon olive oil
1/8 teaspoon salt
Freshly ground black pepper to taste
3 slices crusty country bread

Steps:

  • Preheat oven to 400 degrees.
  • Combine the rice with 2/3 cup water and bring to a boil in heavy-bottomed pot. Reduce heat and simmer, covered, cooking a total of 17 minutes.
  • Wash and trim asparagus by breaking stalks at the point where the tough woody part meets the tender stalk. Take 1 pound of the asparagus and cut the stalks into 1/4-inch pieces. Steam the asparagus for 3 to 5 minutes, until it is tender but still firm.
  • Meanwhile, wash and chop the chives; wash, trim, seed and chop the red pepper into small dices. Wash the thyme and remove leaves from sprigs; cut the shrimp into 1/4-inch pieces; grate the rind of the orange, and grate the cheese.
  • Drain the asparagus. Steam the remaining whole asparagus.
  • Whisk the eggs and egg whites until they are well beaten. Stir in the chives, red pepper, thyme, shrimp, orange rind, cheese and cut-up asparagus. When rice is cooked, stir in. Season with salt and pepper.
  • Heat a 12-inch nonstick saute pan that can go into the oven over medium-high heat. Add the oil and pour egg mixture in the pan, stirring for about a minute. Reduce heat to low and cook for 2 minutes longer.
  • Drain the whole asparagus.
  • Place saute pan in the oven and bake until the eggs set, about 5 minutes. Loosen the frittata and place a serving plate over the pan. Flip the frittata on to the serving plate. Surround with the whole asparagus. Serve with bread.
