COUNTRY POUND CAKE

This a really good down-home style, back to basics pound cake that my whole family enjoys! This recipe was handed down to me with the stipulation of placing the cake in a cold oven, and it turns out perfectly every time.

Number Of Ingredients 10

3 cups all-purpose flour
¾ teaspoon baking powder
¼ teaspoon salt
1 cup unsalted butter, softened
½ cup shortening
2 ⅔ cups white sugar
5 eggs
1 cup milk
1 teaspoon vanilla extract
1 teaspoon lemon extract

Steps:

  • Do not preheat the oven. Grease 10 inch tube pan and line bottom with wax paper or parchment paper.
  • Sift together the flour, baking powder and salt. Set aside.
  • In a large bowl, beat the butter, shortening, and sugar on low speed for 10 minutes. Add the eggs one at a time, blending well after each addition. Alternately add the flour mixture and milk, mixing well. Add the vanilla and lemon extracts.
  • Pour batter into the prepared pan. Set the oven temperature to 350 degrees F (175 degrees C. Bake for 1 hour and 20 minutes, or until a toothpick inserted into the middle of cake comes out clean. Allow cake to cool in the pan for 1 hour. Remove to a cake rack and cool for at least 3 hours.

12 oz cooked crawfish tails, chopped
1/4 lb cooked andouille sausage, chopped
2 celery hearts, chopped
1 small red pepper, chopped
1 small onion, chopped
2 Tbsp tbsp italian parsely, chopped
1 large egg, beaten
3 Tbsp mayonnaise
1 Tbsp seafood seasoning
1/2 c panko bread crumbs
1 lemon, zest
5 Tbsp evoo
CHIPOTLE COLESLAW:
1 pkg coleslaw mix
1 chipotle pepper in adobo sauce, chopped
2 oz arugula
3 Tbsp apple cider vinegar
3 Tbsp mayonnaise
1 Tbsp sugar
salt and pepper to taste
chill coleslaw for 30 minutes

Steps:

  • 1. In large heated skillet add 1 tbsp of evoo. Sautee ingredients 3-6, until soft. Remove from pan and cool for about 10 minutes
  • 2. In a large mixing bowl, combine crawfish tails, sausage, cooled veggies, egg, mayo, 1/4 panko bread crumbs and seafood seasoning. Mix well.
  • 3. Make 6 even patties or (24) 2 inch patties. Bread patties with remaining panko bread crumbs.
  • 4. Pan fry patties with 3 tbsp evoo for 2-3 minutes on each side, until golden brown.
  • 5. Cook biscuits according to package. Brush biscuits with remaining evoo, tumeric and herbs de provence the last minute of baking.
  • 6. Slice bread in half. place patties, bread, top with coleslaw and top half of bread

Famous in the Low Country of Georgia and South Carolina. This boil is done best on an outdoor cooker. It has sausage, shrimp, crab, potatoes and corn for an all-in-one pot all-you-can-eat buffet!

1 tablespoon seafood seasoning (such as Old Bay®), or to taste
5 pounds new potatoes
3 (16 ounce) packages cooked kielbasa sausage, cut into 1 inch pieces
8 ears fresh corn, husks and silks removed
5 pounds whole crab, broken into pieces
4 pounds fresh shrimp, peeled and deveined

Steps:

  • Heat a large pot of water over an outdoor cooker, or medium-high heat indoors. Add Old Bay Seasoning to taste, and bring to a boil. Add potatoes, and sausage, and cook for about 10 minutes. Add the corn and crab; cook for another 5 minutes, then add the shrimp when everything else is almost done, and cook for another 3 or 4 minutes.
  • Drain off the water and pour the contents out onto a picnic table covered with newspaper. Grab a paper plate and a beer and enjoy!

Blue crabs are abundant among the Lowcountry's saltwater rivers and marshes. If you can, use fresh sweet crab sold in plastic containers (not canned) for the best flavor. The best crab cakes are made with lots of crab and just enough egg and breadcrumbs to hold it together. These will not disappoint! Serve as an appetizer with a dollop of Yogurt Rémoulade (search for the recipe in the WW app).

1 large Uncooked egg yolk(s)
1 Tbsp Fresh lemon juice
1 clove(s) Garlic clove grated
2 tsp Dry mustard
0.5 tsp Paprika
0.5 tsp Kosher salt
0.25 tsp Black pepper coarsely ground
0.125 tsp Cayenne pepper
0.25 cup(s) Uncooked bell pepper(s) red, finely chopped
0.25 cup(s) Uncooked scallion(s) finely chopped
2 Tbsp Fresh parsley chopped
1 Tbsp Chives chopped
1 pound(s) Lump crabmeat picked over for shells and cartilage
3 Tbsp Fresh breadcrumbs

Steps:

  • In medium bowl, whisk egg, egg yolk, lemon juice, garlic, mustard powder, paprika, salt, black pepper, and cayenne. Stir in bell pepper, scallions, parsley, and chives. Gently fold in crabmeat and breadcrumbs and mold into 4 equal patties, each about 1 inch thick. Place patties on baking sheet and freeze until set up slightly around edges, 10 to 15 minutes.
  • Coat large nonstick skillet with nonstick spray and heat over medium-high. Add chilled patties and cook until golden brown, crispy, and cooked through, 2 to 3 minutes per side.
  • Serving size: 1 patty

1 large egg, lightly beaten
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
2 teaspoons seafood seasoning, such as Old Bay
20 butter crackers, such as Ritz, crushed (about 2 1/2 cups crumbs)
1 pound fresh jumbo lump crabmeat, picked for shells
Vegetable oil, for frying
Remoulade, recipe follows
1 cup mayonnaise
1/4 cup ketchup
2 tablespoons whole-grain mustard
1 tablespoon prepared horseradish
1 tablespoon lemon juice
1 tablespoon chopped fresh chives

Steps:

  • Mix together the egg, mayonnaise, mustard, Worcestershire sauce and seafood seasoning in a bowl. Fold in the cracker crumbs and crabmeat until just combined, being careful not to break up the crab too much. Shape the mixture into six 2- to 2 1/2-inch patties, trying to make straight sides and flat bottoms. Cover and refrigerate until firm, about 1 hour.
  • Preheat the oven to 200 degrees F.
  • Heat 2 tablespoons oil in a large cast-iron skillet over medium-high heat. Add cakes in batches, making sure not to overcrowd the pan. Cook until golden brown, 2 to 3 minutes on each side. Remove the crab cakes to a plate or platter and repeat with the remaining crab cakes, adding more oil if needed. Hold in the warm oven until ready to serve. Serve warm with remoulade.
  • Mix mayonnaise, ketchup, mustard, horseradish, lemon juice and chives in a bowl until combined.

Graham crackers make these cookie bars super easy to make. This recipe calls for pecans, milk, eggs, sugar, shredded coconut and vanilla. After chilling the refrigerator, cut into squares for serving on a holiday platter.

1 cup chopped pecans
1/2 cup 3 tablespoons milk
1 egg
1 cup sugar
12 tablespoons plus 4 tablespoons butter
1 (16 oz) box graham crackers
1 cup (or 3 1/2 oz cans) shredded coconut
2 cups powdered sugar
1 teaspoon vanilla

Steps:

  • Line a 13 x 9-inch pan with whole graham crackers. Melt butter in saucepan and add sugar. Beat egg and milk together; add to butter mixture. Bring to a boil, stirring constantly. Remove from heat. Add nuts, coconut, and 1 cup graham cracker crumbs. Pour over crackers in pan. Cover with another layer of whole graham crackers. Prepare topping.
  • Topping:
  • Beat together the 3 Tbsp milk, 2 cups powdered sugar, 1 tsp vanilla, and 4 Tbsp butter and spread over top layer of crackers. Chill. Cut into squares.
