Low Cholesterol, Vegan-Style Brown Bread image

When I found out that I had high cholesterol, i started to experiment with bread recipes, so u changed some ingredients around to suit my taste and still keep my cholesterol down. Anyone who likes bread as much as I do try this amazing recipe I have come up with and it keeps you Fuller for longer so you may only need one slice.

Yield 1 Large loaf 900g

Number Of Ingredients 10

330 ml water
12 g virgin olive oil
8 g sea salt
10 g total sweet artificial sweetener
21 g soya milk
2 cups strong wholewheat flour
2 cups quinoa flour
1 cup gluten-free self-raising flour
1/2 cup of plant based protein powder
6 g yeast

Steps:

  • Always start with the wet ingredients first for the breadmaker if you have one. This is what I used settings: wholewheat, 900g,medium. Cooking time is 3hrs. If you are making this via mixing bowl start in the same way. Ensure oven is gas Mark 250 then lower it to 150 once bread is ready to be baked.
  • Then add all the dry ingredients next with the yeast last to add. Start kneading once it has formed a dough for ten minutes.
  • Place the dough on a bowl, cover with clingfilm in a warm place and leave to raise for an hour.
  • Grease bread pan with low cholesterol butter, then place the dough in the pan moulding it to size you desire, then place in the oven to bake until golden brown. Keep checking with a tooth pick to ensure bread is cooked in the middle.
  • The smell should be amazing and the taste will be even better. Try it with sugar free jam or almond butter and banana or just simply low cholesterol butter. Yummy ??.

if you are a fan of the canned version you will love this! --- not only is this low fat, egg-free and very low in cholesterol it takes only 5 minutes to mix although there is another 5 minutes sitting time, you may use 2 cups whole wheat flour and 1 cup all-purpose flour either way works well--- for greasing the pan see my recipe#78579

Number Of Ingredients 8

1 cup whole wheat flour
2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
2/3 cup brown sugar, packed
1/4 cup molasses
2 cups low-fat buttermilk (for best results do not substitute milk)
1/2-3/4 cup raisins (or chopped dates, can use more)

Steps:

  • Set oven to 350 degrees F.
  • Grease and flour a 9 x 5-inch loaf pan (can use two smaller loaf pans).
  • In a large bowl whisk the whole wheat flour with white flour, baking soda and brown sugar.
  • Using a wooden spoon or spatula mix in molasses and buttermilk until JUST combined (do not over mix).
  • Gently mix in raisins or chopped dates.
  • Spread in prepared loaf pan then allow the pan to sit on the counter for 5 minutes.
  • Bake for 50-60 minutes or until the loaf tests done (reduce cooking time if using smaller loaf pans).
  • Cool on a wire rack for 5 minutes then remove to a wire rack to cool completely.

  • Select the basic cycle, and light crust.
  • For a crispier crust, select the FRENCH cycle, or turn the machine off after the first rising cycle, and start the cycle from start again.
