LOW-CARB ZUCCHINI "RAVIOLI" RECIPE BY TASTY



Low-Carb Zucchini

Here's what you need: medium zucchinis, olive oil, garlic, fresh spinach, ricotta cheese, fresh basil, salt, pepper, marinara sauce, shredded mozzarella cheese

Number Of Ingredients 10

2 medium zucchinis
olive oil, to taste
2 cloves garlic, minced
2 cups fresh spinach, chopped
1 cup ricotta cheese
2 tablespoons fresh basil, finely sliced
salt, to taste
pepper, to taste
1 cup marinara sauce
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 425°F (220°C).
  • Cut off the end of each zucchini then using a vegetable peeler, peel each zucchini into wide strips.
  • Transfer the zucchini strips to a plate then layer two strips vertically and two strips horizontally to make a cross. Repeat process with remaining strips.
  • Heat a pan over medium-high heat.
  • Add olive oil then garlic and sauté for 30 seconds to 1 minute.
  • Add spinach, salt, and pepper. Sauté for 1-2 minutes, until wilted down.
  • Remove from heat and allow to cool for 10 minutes.
  • In a large bowl, add the spinach and garlic. Add the ricotta, basil, salt, and pepper. Mix until well combined.
  • Using a spoon or cookie scoop, scoop approximately 1 tablespoon of the mixture and place in the middle of each zucchini noodle cross.
  • Fold each side to seal the ricotta mixture then flip over the ravioli so the seam side is on the bottom.
  • In a baking dish pour the marinara sauce then smooth with a spatula.
  • Evenly place the zucchini raviolis then top with mozzarella cheese.
  • Bake for 15-20 minutes.
  • Serve with fresh basil.
  • Enjoy!

2 zucchinis, peeled
1 tablespoon olive oil
¼ cup water
salt and ground black pepper to taste

Steps:

  • Cut lengthwise slices from zucchini using a vegetable peeler, stopping when the seeds are reached. Turn zucchini over and continue 'peeling' until all the zucchini is in long strips; discard seeds. Slice the zucchini into thinner strips resembling spaghetti.
  • Heat olive oil in a skillet over medium heat; cook and stir zucchini in the hot oil for 1 minute. Add water and cook until zucchini is softened, 5 to 7 minutes. Season with salt and pepper.

This creamy and delish feta pasta bake is an easy, Mediterranean inspired meal.

8 ounce block of feta cheese
¾ lb cherry tomatoes (or grape tomatoes, about 3 cups)
3 Tablespoons olive oil
3 cloves garlic (minced)
½ teaspoon basil
½ teaspoon oregano
⅛ teaspoon red chili flakes
¼ cup fresh basil
4 medium zucchini
salt & pepper (to taste)
fresh basil and parsley (for serving)

Steps:

  • Preheat oven to 400°F.
  • Toss tomatoes with olive oil and garlic in a baking dish. Nestle feta in the tomatoes. Bake for 25 minutes.
  • While baking, spiralize zucchini into medium spirals. Cook zucchini over medium heat 3-4 minutes or just until heated through but still tender-crisp.
  • Remove tomatoes and feta from oven. Feta should be melty soft and browned, and the tomatoes soft and splitting. Stir the mixture, then add zucchini noodles and half of the basil. Mix well.
  • Place back into the oven and broil 2-3 minutes. Top with remaining herbs and serve.

400 g lean ground beef
1 medium onion
3 garlic cloves
2 1/2 ml coconut oil
5 g chili powder
5 g cumin powder
800 g zucchini
2 1/2 g low sodium salt

Steps:

  • Heat up coconut oil on a large pan at medium heat.
  • Fry the ground beef till brown. (Drain the melted fat to make it less fatty).
  • Cut your zucchini noodles whatever method suits you best. I usually buy spiralized zucchini.
  • Chop onions and garlic on a food processor or manually.
  • Add spices, chilli, salt and stir.
  • Add onion, garlic and cover up with a lid. Stir every few minutes till onions and garlic soften.
  • Remove the ground beef from the pan. On the same pan add your zucchini pasta.
  • Cook your zucchini pasta for a minute. Then add the cooked ground beef to allow the flavours to be absorbed into the zucchini pasta.
  • Cook your zucchini al dente. Serve and enjoy!

  • Cut zucchini into spirals or noodle strands using the vegetable spiralizer or julienne peeler. Set aside noodles.
  • Heat large pan on medium-high heat. Melt butter, then add garlic. Cook garlic until fragrant and translucent, about 30 seconds. Don't let the garlic burn.Add zucchini noodles and cook until tender, about 3-5 minutes. Zucchini noodles cook really fast, so taste a strand as you cook and decide how firm or "al-dente" you want the zucchini. Don't overcook the zucchini noodles or else they'll become mush.
  • Remove the pan from the heat, add parmesan cheese and season generously with salt and pepper to taste. Add chili flakes then serve warm.
