Steps:

  • Beat cream in a chilled glass or metal bowl using an electric mixer until soft peaks form.
  • Mix cream cheese, cocoa powder, stevia, and vanilla extract in a second bowl using an electric mixer. Fold 1 tablespoon of whipped cream into the cream cheese mixture. Fold in remaining whipped cream until well incorporated. Spoon chocolate mousse into individual serving bowls and refrigerate.

1 cup heavy cream
3 egg whites
whipped cream and grated chocolate, to serve, optional

Steps:

  • Roughly break up the chocolate, place it in a microwave-safe bowl, and cook for one minute. Stir, then continue cooking in 30 second bursts - stirring between each burst - until the chocolate has melted. Stir in ¼ cup of the heavy cream.
  • Place the egg whites in a stand mixer and beat until stiff peaks form. In a separate bowl, whip some heavy cream until stiff. For best results, chill the bowl and whisk beater in advance.

CRUST:
1 1/2 c almond flour
3 Tbsp butter, melted
1 Tbsp ground flax seed
2 Tbsp stevia in the raw
PIE FILLING:
90 g sliced fresh strawberries (about 8 berries)
1 box sugar free white chocolate instant pudding mix (1 oz)
1 c milk
6 oz cool whip

Steps:

  • 1. Heat oven to 350 F. Melt the butter and mix the ingredients for the crust up in the pan and press into place with your fingertips.
  • 2. Bake for about 10 minutes until the crust is beginning to brown. After 8 minutes, check every minute or so, because once it starts to brown it goes quickly. Allow to cool completely.
  • 3. Slice strawberries thin and spread in bottom of cooled crust.
  • 4. In a mixing bowl, combine pudding mix and milk until thickened. Fold in cool whip until well blended. Spread over strawberries in pie plate. Chill until ready to serve.
