Tasty and easy tuna cakes are the perfect low carb lunch solution when you need something quick and easy. With one big bowl, a fork, and a pan, you'll have your nutritious, keto meal in 20 minutes!

4 oz tuna (can, in water, drain liquid)
¼ cup parmesan cheese
1 egg
½ cup almond flour
1 tbsp mustard
1 tsp onion powder (white )
1 tsp smoked paprika
1 tbsp oregano
Salt (to taste)
1 tbsp coconut oil (for frying)

Steps:

  • Drain tuna to make sure it doesn't contain any liquid. In a medium-size mixing bowl, combine all ingredients. Stir with a fork until the dough is easy to form 6 patties.
  • In a frying pan over medium heat, add coconut oil or olive oil in. Fry each patty until golden.
  • Your lunch is ready to serve with lettuce and mayonnaise.

This is a great change for fussy tuna eaters. Kids & grown-ups love them. You may want to make extra sauce which you'll find requests for. Also, grate extra cheese to microwave melt over muffins before adding sauce.

Number Of Ingredients 12

2 cups cooked rice, cooled (any variety, sticky white rice holds together better)
1 (170 g) can tuna in water
1 cup cheddar cheese, grated
1 tablespoon parsley
1 tablespoon fresh onion, depending on taste (or more)
1 teaspoon seasoning salt
2 tablespoons milk
2 eggs
1 tablespoon lemon juice
1/2 teaspoon seasoning salt
1/2 teaspoon parsley
1/4 cup melted butter or 1/4 cup margarine

Steps:

  • Mix first eight ingredients together and lightly press into a very well greased muffin tin.
  • Bake at 375 F for 15 minutes. Tops should just start to brown & bubble. Note - baking time will vary with size of muffin tins.
  • Let cool about 5 minutes to allow for easier removal from pans then turn out onto individual serving dishes.
  • Combine sauce ingredients and drizzle over top of muffins.

1/4 cup celery, chopped fine
2 tablespoons onions, chopped fine
1/4 cup green pepper, minced

Old Bay Seasoning, to taste (a pinch)

Steps:

  • Mix all ingredients and spoon into 6 well-greased muffin cups.
  • Bake at 350ºF for 30 minutes until puffed, set and lightly browned around the edges.
