LOW CARB STRAWBERRY JELL-O SALAD, OLD SCHOOL BABY!
This is reminiscent of that jell-o cottage cheese dish that my momma used to make, but using no sugar & subbing real cream for that nasty freezer case stuff.

THE BEST JELL-O SALAD EVER! STRAWBERRY JELLO SALAD WITH BANANA
This really is one of the BEST Jell-o Salad Recipes. This recipe came from my mother's cousin Antoinette. This recipe has been popular in her family for over 40 years. It is a delicious treat during the summer months as well as an accompanying Holiday dessert (Color goes well for Holiday dessert table). The recipe calls for real whipped cream, however I'm sure that Cool Whip could be substituted as the recipe probably pre-dates the ease of prepared whipped topping, but I do prefer the original recipe as it just makes it more traditional. Note: I use Strawberry Jello, but I'm sure any kind of berry or cherry flavor would work well too... I also use food processor chopper for preparing the bananas & cherries - I use whisk attachment on electric mixer for preparing the set jello & whipping the cream.

SUGAR-FREE STRAWBERRY BANANA DELIGHT JELLO SALAD
This is an excellent low-calorie, sugar-free recipe for holiday meals. Many of the older people in my family have diabetes and this allows them to partake in dessert.

STRAWBERRY JELLO SALAD
This is one of those dishes that my mother is always asked to bring to Christmas and Thanksgiving gatherings. She makes different versions based on the tastes of those receiving it. Some prefer no nuts, others prefer no sour cream, others prefer no bananas. I think the original name of this salad is Strawberry Sour Cream Salad, but since she omits sour cream most of the time, we usually just call it Strawberry Salad.

Steps:
- Using a strainer placed over a bowl, drain the strawberries and pineapple, reserving 2 cups of the fruit juice.
- Dissolve jello in boiling water.
- Add 2 cups reserved fruit juice. (If you do not have enough juice from the fruit, add cold water).
- Add the sliced bananas, drained strawberries, and drained crushed pineapple. (IF you are not using the sour cream, mix in walnuts, then pour entire batch into 9x13 dish and skip to final step).
- Pour half the jello mixture into a 9x13 dish.
- Refrigerate until set. Do not refrigerate the remaining jello mixture in the bowl-otherwise it will begin to set.
- Spread set layer with the sour cream and sprinkle with walnuts (if using). Pour remaining jello mixture over sour cream layer.
- Refrigerate several hours. This sets up best overnight.

I got this recipe from an issue of Taste of Home and it has become a huge family hit. Requested all year round. Quickly fixes in one dish. Cranberry Jello-o can be used and so can sugar free, tastes great no matter.

- Heat up the water so it’s hot. Pour into a bowl. Sprinkle the gelatin powder on top and let it sit for a few minutes to bloom. Then whisk it in well so there are no lumps. You can microwave the mixture or put into a water bath if you’re having trouble dissolving it.
- Puree the strawberries, cream, vanilla extract, and stevia. Pour the puree mixture into the gelatin mixture and mix well.
- Refrigerate for 30 minutes so it starts to set. Then remove and stir in the chopped strawberries. If the jello is already set, then just microwave for a few seconds. (You want to add in the chopped strawberries later so that they don’t all sink to the bottom.)
