- Combine chicken, zucchini, celery, yellow squash, green beans, onion, basil, celery salt, salt, and pepper in a slow cooker. Add chicken broth, making sure it covers ingredients.

LOW CARB CHICKEN TACO SOUP
This low carb chicken taco soup recipe can be made in a pressure cooker or slow cooker. The broth is bursting with flavor and makes such a tasty soup.

- Add the chicken, onion, garlic, chipotles, cumin, chili powder, paprika, salt, lemon juice, lime juice, and chicken broth to an Instant Pot.
- Cover, turn vent to sealing, and cook on high pressure for 18 minutes.
- Allow pressure to release naturally, about 10 minutes, before removing the lid.
- Remove chicken from pot and shred with two forks.
- Turn the Instant Pot to saute and add the cream cheese. Whisk constantly until the cream cheese is fully melted and incorporated.
- Turn Instant Pot off and return chicken to the pot. Add the cilantro and stir well to combine.
- Serve immediately

SLOW COOKER LEMON CHICKEN SOUP
This easy slow cooker lemon chicken soup is perfect for the busy family. Made with zucchini noodles, this low carb soup is perfect to prep in the morning and will warm you up during the fall and winter months.

- Heat 2 tsp Avocado oil in large skillet over medium high heat. Add chopped garlic, onion, celery, carrots, thyme, rosemary, sage, salt and pepper. Saute until vegetables begin to soften or until onions are translucent. This will take about 8-10 minutes.
- Trim fat from chicken breasts and filet each chicken breast long ways into 2 thin pieces each. Add to the bottom of the slow cooker.
- Add cooked vegetables on top of chicken, then add chicken stock, bay leaves, lemon zest and lemon juice.
- Cook on high for 3-4 hours or low for 6-8 hours until chicken breast is cooked all the way through.
- Once chicken is cooked, remove with tongs and shred. Add chicken back in and remove bay leaves.
- Stir in raw zucchini noodles. Adjust seasonings if needsd and serve hot.

- Heat slow cooker on low setting. To slow cooker, add garlic, shallot, leek, celery, mushrooms, onions, 2 tbsp butter, 1 cup chicken stock, sea salt and black pepper. Cover, and cook vegetables on low for 1 hour. Complete this next step while the vegetables are cooking – In a large skillet over medium-high heat, pan-sear the chicken breasts in the remaining 2 tbsp butter until they are browned on both sides. – About 5 minutes each side.
